I was that way with Okra! I have started dehydrating eggplant slices and making chips, we love them. I slice thin, lightly spray olive oil on them, sprinkle salt, pepper, garlic powder, dehydrate for 8-10 hrs at 135 degrees.

I’ve fried battered eggplant , but your eggplant fries just took it to another level! It will be a great alternative to potato fries, since it’s low in potassium. My Mr. H is a stage 5 kidney patient on dialysis and he’ll enjoy. Thanks for sharing.👍😊
Where is the eggplant fries recipe? I can't find it! I'm in Kentucky and I do what I'd do without my potatoes. Potassium too high in his body? No pill to bring it down? I'm so sorry for that. I'm diabetic and I try to cut carbs every way I can to keep my A1c down to 5.5 or lower. The lady that makes the thin batter for her eggplant? Sounds like how I fix fried zucchini and yellow squash, but I don't soak in salt water first. I sprinkle it lightly on the batter side is up in the pan but the last few years I've cut that completely out because of dipping it in the Arby's Horsey sauce. As for the Season All seasoning, I've never heard of it here. Probably sorta like Accent maybe? Supposed to wake up flavor in ALL foods? Don't use that anymore either. I make sweet potato fries in my large convection/toaster oven. Just slice and then spread a little olive or other oil on top and bake. The dogs and I love them. But mostly we eat them baked with a little butter and brown sugar. My husband will eat them now and then. He's not a fan of veggies unless it's Brussels sprouts or green beans. Got 2 zucchini, 2 yellow squash, and about a half gallon of blue lake green beans. Very disappointed with them. I got 4 big packs of 130+ to a pack. Planted 30 hills but maybe 1 whole package came up. I gave them a bad review on Amazon too. I was counting on those beans! Everything else looks pretty good. God bless us all. Well hello Mrs H🌺 I tried these for the first time and they are delish! I gotta tell you, I had some very over ripe bitter eggplant, and didn’t know if I could save them. I soaked them in milk for 3 days to kill the bitterness and they firmed up and didn’t brown anymore. Then I made your batter which was perfect and put the strips of eggplant in and shook and fried in coconut oil on med hi to med heat til brown and these were awesome. Dipped in a homemade ranch and some in a homemade marinara. These were so good. Thank you so much!
Great idea to freeze the egg plant I didn't know you could even freeze them I like my eggplant to be battered and fried or make them with bread crumbs and fry them they are delicious so thank you for sharing this nifty idea Mrs h you have so much with someone knowledge when it comes to canning and preserving food they set your blessing may the Lord continue to bless the works of you and your husband's hand 👌 Peace and Love 💖
Thank you so much. We are growing eggplant for the first time this year and I was wondering how to preserve it. We love to make spaghetti squash, eggplant bake with homemade meatballs, and homemade tomato sauce. Top with cheese and bake. It is super yummy. I will make your fries too and preserve all our eggplant harvest.
Thank you Mrs H for the video. I have just put my eggplant seeds in trays on a heat mat for Spring planting here in Australia. Best way I have ever seen to store them long term and the batter sounds delicious. The air fryer will be having a work out when we harvest from the garden. God Bless
I am growing eggplant for the first time ever. Never really knew what to do with it. Yesterday I diced into chunks and dropped it in my spaghetti sauce. It made a really nice addition. Will try this also. It is relatively easy to grow. I have always been leary of it, lol.
This is an amazing video. I’ve been looking for ideas on how to preserve my eggplant in new ways other than just chopping it up and freezing it to later add it into my fresh from the garden spaghetti sauce
I use my raw meat bag, wash it with bleach and soap and use it as a double bad. I put the good bag inside the old bag and make a double freezer bag. Or I put three little bags into the old gallon bag.

Love eggplant and love your method. I blanche in a bit of vinegar in boil water cool it in cold, let drip dry, freeze like you do then bag them and use in tomato sauce when needed. Will try your way next time for fries. Thanks for all your teaching. God bless.

I am going to do this. So glad you peeled it. We always peel our eggplant no matter how it is going to be used. It is how I was taught and I find I just don't like the skin on no matter what I'm cooking. I will definitely be doing this with eggplant. There is only so much eggplant parm or rollatine or just breaded and fried slices people want as a main dish but fries as a side or snack is a crowd pleaser.
I’m glad you did this video because I love eggplant but it’s kinda difficult to do meals with it other than egg plant Parm and dicing it up to use in stir fry I never heard of frys

(LITTLE SHOP OF SEEDS ) I got them within 4 days. I'm a beginner container grower, I live in an apartment without a patio so I cannot do to much. But im listening and writing. Sorry I'm a rambler. I didn't get any eggplants this year because the critters in my garden keep getting to them first! I am going to get some eggplant at the grocery store and give this a try. It would be a nice change of pace as a side dish one night for dinner.
