I am grateful that you guys are very real and honest concerning this recipe! It happens to everyone. I just happen to have an enchilada casserole in the oven right now for dinner tonight. I made it with pinto and black beans and layers of white corn tortillas it also calls for a can of enchilada sauce. I also added a diced up zucchini and sliced black olives and cheese. So funny, I thought that I could mimic this recipe. Suddenly the video stopped after Marie tasted the new recipe. First, I thought my phone glitched ( it is 8 years old). About the 50 questions video the other day. I really enjoyed how Marie explained the order of the house hold. No wonder you guys are still thriving with 53 years marriage under y'all's belts. I was just thinking the same thing. Serve the beans on the side. I would leave out the corn as well, and probably add more of the enchilada sauce. I wouldn't mind the soft chips since traditional enchiladas use soft corn tortillas to start with.

I wonder if putting the full cans of sauce would have made the difference and use less tortilla chips or save chips to garnish the plates? I might try this recipe and tweak it some. I wear wigs occasionally - just because it is easier to put on then fix my hair. Some people naturally look good in wigs & u are one of them- it looks so natural. Marie looked so pretty in her wig. It happens with cooking not all recipes are winners. I don't want soggy chips either. Im thinking you could bake the mixture without the chips mixed in & serve as a hot dip with the chips or line a baking sheet with the chips & spread the mixture on top & bake for Nachos. I think that sounds good also.

I like your wig Marie. It makes you look younger. I like that spatula that Calvin was mixing with. You can spray your foil with nonstick and it wil keep the cheese from sticking to it. I was wondering if the chips would get soggy.
The wig looks beautiful on you Marie...You always look beautiful with or without a wig...Im almost 62 and have always had very thick hair until a year ago...I find this time of year my hair falls out in big clumps, not sure why...I'm going to start daily vitamins for hair growth to see if makes a difference...The recipe was easy and for us Mexican food lovers I think I would give it a try...God Bless 🙏🙏🙏

I was just reading that hot spices can actually increase your metabolic rate. I can go no hotter than a medium salsa. Still doing well with my soda reducing and coffee. It is hard but I think It'll be worth it, sleeping better already!🙏

Marie, I know what you're saying about not being able to fix your hair the way you like. I have had to resort to wearing my wig in the past when that happened to me too. I only have one and have it stored away--been such a long time since I last used it. Too bad you went through all that and spent your $$ on those ingredients only to get something disappointing. It happens, and I think I know why. I made a very satisfying meal today, with the recipe printed on the back of a Campbell's chicken gravy label called Easy Baked Chicken, perfect for two servings and economical. I make enchiladas alot. Looks good but I would have put taco seasoning in my hamburger tho its the only difference I would make. Love watching you too Marie you look just fine sweetie ❤😊 God bless 🙌

You look beautiful no matter what your hair looks like. The wig is very cute. I used to make something similar except I used Fritos scoops. They are a bit thicker. I also added black olives like Marie had suggested.

Sorry this delicious looking meal failed the taste test. Seemed to have delicious ingredients. Were the tortilla chips plain ? Maybe needed more moisture/sauce/salsa. A few years ago saw a u tube recipe called lazy man enchiladas with basically the same ingredients. Better luck next time. You usually succeed. 🥰🥰🥰🌷🌷🌷

This dish looked doomed from the start. It could have been great with better salsa, add a can of Rotel tomatoes, leave the chips whole and layer everything so it is not so pasty…also using canned beans and not refried beans could have improved it. There are so many GREAT Mexican dishes. Also red enchilada sauce is a very mild flavoring tool. Could have benefitted from adding a packet of Taco seasoning to the meat. I LOVE YOUR CHANNEL…keep cooking but do not give up on Mexican food.
