My garden is producing plenty of aubergines and tomatoes at the moment, so I tried this recipe, and I love it! Quick to make, fruity, subtle sweetness from the onions, refreshing kick from the lemon juice, so good 👍🏻

@@SweetChicagoGator He added sautéd garlic. Roasting a whole head of garlic in the oven to a creamy consistency would considerably enhance the flavor of this dip.

I have an important questions: what kind of heavy cream did you use that is solid? Here in the USA, heavy cream (30%+ fat is liquid), we do have something called medium or table cream and that’s 18-22% fat and that’s thicker and more solid like in your recipe. Thus, what kind of cream was that if you don’t mind dropping the brand. Secondly, I love your channel! My family is from montpellier and so many of the recipes are so familiar to me!!

Although I like baba ghanoush, I think I prefer this better. I have a similar dish from my country with the exception of lemon and mustard.

In N.Macedonia there is Ajvar (pronounced almost like (c)aviar) and it is with red pepper and aubergine. Didn't expect that aubergine is 'considered' caviar in many countries!

nonono - you cannot compare this to ajvar! ajvar is supposed to cook for hours, it’s like a confiture of paprika (bell peppers), pepperoni, aubergines (not the main ingredient in ajvar!) and/or tomatoes. color and recipe vary from the north to the south of the Balkans.

Chef, try it with Greek yogurt and garlic with mint….middle eastern dish as well. Like baba ganooj but 100% yummier (I love garlic lol)

In North India we make a similar dish called Baingan (aubergine) Bharta. It’s delicious and served warm. I’m going to try this!

That looks great. The only minor thing I would do is early you score, oil, then salt. I would score, salt then oil. Mainly the salt will float on the oil, but if you salt first it will dissolve into the "meat" and then the oil will conduct heat. Minor quibble.

I make this the way my Romanian grandmother made it. The challenge is picking a really good eggplant. This can be difficult.

Just use a skewer and cook the aubergine directly on the gas fire. Oven is a waste of time and money.

The ability of eggplant to soak up oils never ceases to amaze.... Nature's #1 gift for turning grease into acceptably healthy food!😄 (Serve it with soft cheese and/or hard boiled eggs, salad, and multi-grain whole wheat toast if you're nutritionally squeamish- large amounts of chilled white if less so)
