Easy King Ranch Chicken Skillet
1 Tbsp Oil
4 C Rotisserie Chicken - chopped or shredded
1 Medium Onion - chopped
2 Large Poblano Peppers - chopped (can also use bell peppers)
1 Can Rotel w/Green Chilies
1 Can Cream of Mushroom Soup
1/2 C Chicken Broth
1 1/2 tsp Cumin
1 tsp Salt
1/2 tsp Pepper
2 C Cheddar Cheese - shredded & divided
8 5" Corn Tortillas - cut in 8ths
Fresh Cilantro for garnish
Add oil to an oven safe skillet, add onions, cook 1 - 2 minutes then add
the poblano peppers. Stir and cook 3 - 4 minutes. Stir in rotel, cream of
mushroom soup, chicken broth. Add in your seasonings and bring mixture to a boil.
Stir in 1 cup of shredded cheddar cheese. Place the corn tortillas on the chicken
mixture and top with remaining 1 cup of cheddar,
Place in a 425 F oven for 15 - 20 minutes or until cheese has melted and turned
slightly brown.
Garnish with fresh cilantro.
