Viral Low-Carb Cottage Cheese Bagels Recipe
Ingredients:
1 cup cottage cheese (full-fat for creaminess)
1 cup almond flour
2 tablespoons coconut flour
2 teaspoons baking powder
1 teaspoon salt
2 large eggs
1 tablespoon apple cider vinegar
1 tablespoon sesame seeds (optional, for topping)
1 tablespoon poppy seeds (optional, for topping)
1 tablespoon everything bagel seasoning (optional, for topping)
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
Prepare the Cottage Cheese:
In a blender or food processor, blend the cottage cheese until smooth. This will help it mix better with the other ingredients.
Mix Dry Ingredients:
In a large mixing bowl, combine the almond flour, coconut flour, baking powder, and salt. Mix well.
Combine Wet and Dry Ingredients:
Add the blended cottage cheese, eggs, and apple cider vinegar to the dry ingredients. Stir until a thick dough forms. The dough will be sticky but should hold together well.
Shape the Bagels:
Divide the dough into 6 equal portions. Wet your hands to prevent sticking and shape each portion into a ball. Flatten slightly and use your fingers to create a hole in the center, forming a bagel shape. Place the shaped bagels onto the prepared baking sheet.
Add Toppings:
If desired, sprinkle sesame seeds, poppy seeds, or everything bagel seasoning over the top of the bagels.
Bake:
Bake in the preheated oven for 20-25 minutes, or until the bagels are golden brown and firm to the touch.
Cool and Serve:
Allow the bagels to cool on a wire rack before serving. Enjoy them as is or with your favorite low-carb toppings, such as cream cheese, avocado, or smoked salmon.
Tips:
Blending the Cottage Cheese: Blending cottage cheese smooths out its texture, making it easier to incorporate into the dough.
Handling Sticky Dough: Wetting your hands makes handling the sticky dough much easier.
Storage: These bagels can be stored in an airtight container in the refrigerator for up to 5 days. They also freeze well for up to a month.

I was laughing my tail off at the parchment paper debacle!! As another ADHD’er (yes diagnosed) I fix everything in advance and Dave fixes everything in the process… it’s hysterical! You gotta love him! I bet his wife wants to Simultaneously strangle him and hug you at the same time! One of the things that I SO ADMIRE is how you love your family Dave!

Going to try these! For a "rounder" and thicker bagel, try rolling the dough into a long tube and THEN take the tube and shape into a bagel.

I love that you make mistakes and don’t edit them out! I always think I’m following the directions but nope I always add something too early or some other stupid mistake! You know, I have gotten so that I actually prefer thinner bagels, but the ones off the shelves are TOO thin, Especially Thomas' brand keto bagel thins. The ones YOU JUST MADE, dude, are absolutely perfect for me! And sugar, I also ABSOLUTELY love your 'realness'. That you operate in the kitchen just like us and .... YOU LET IT BE SEEN! I also just gotta add that I became addicted to bagels in 1979, when I was doing my externship in a dentist office and we all went to the local Jewish deli every day for lunch. a bagel & cream cheese and a chef salad. OMG so good. Currently, I go to a bagel deli type eatery and grab my favorite onion one ---- once in a while. Not even on a monthly basis. they are awesome, but i AM trying to bring my diabetes under control, so I don't let myself have them on the regular. THANK YOU for bringing guilt free bagels into my life! Now I can indulge to my heart's content.

Just made these, I did add an extra tablespoon of coconut flour. They turned out pretty good. I had half with butter and half with cream cheese. I will definitely make them again. Thank you.

Your video was great. Mistakes give it charm and reality. I’ve been there and done that. Sometimes letting the mixture with almond and coconut flours sit for five to ten minutes great job.make them less sticky, for future reference. I wear kitchen cooking, (disposable), gloves when I need to shape these kind of doughs. They stay wet longer, and they tend to not stick so much. But I had learn it as well.

My friend got me hooked on your channel. I do like the way you make the same mistakes I would. It's funny you forgot to drain the cottage cheese in your bread video, and it didn't call for that in this video. I do not suggest you try to make bagels unless you're not too picky about the taste. Being a NYer living in Fl and LOVING NY bagels, I've been trying to make them, and they need to rise twice. And if you want that amazing yeasty sweet flavor, you let your last rise go overnight in the fridge. If you really want to try making them, get a good mixer with a dough hook. Kneading dough can take a while. I do enjoy trying to make them though.

I like how you present your vids... I wouldn't have thought to snip the parchment paper that way, but that's a genius hack! I usually just struggle with a too big piece... So definitely, thanks for keeping it real... I also really loved your mess-up at the beginning, bc that's something we all do. Maybe, you could show how to salvage those ingredients, or turn them into something else at the end of your vid as an outtake, or what to do when you mess up remedy... we're all struggling with food prices so high, so it would make more sense to find a solution to mistakes than to toss out perfectly good food~ just an idea!

I was 14 yrs old before I even knew bagels existed, & I'll never forget it. My dear, sweet Aunt Pat took me to a deli in Portland OR called "Harry's Mustache". We ordered bagels & cream cheese, toasted, w/a side of smoked turkey & cranberry sauce~ oh my word, I could not believe the food joy I experienced that day! From then on, we had bagels & cream cheese in the house, & they were still hard to find in grocery stores~ this was 1979-80 or so. There were no bagel shops yet, & we often had to buy them at specialty bakeries or delis. Love how you consult AI for these recipes. Maybe your channel should be called ; "Cooking With D-AI-V-E", hehe🙃

Advice from some of the best chefs, which took me many decades to finally take seriously, is "Mise en place (pronounced meez ahn plas) is a wonderful French cooking term that literally translates to ‘put in place’. It works. Otherwise, I like your RU-vid style.

Hey they're thin, no need to cut! The only danger making bagels. Cutting! These look easy and a good replacement. I've got to have bread replacements for my husband to try low carb...put an egg between two, with sausage, ham, or bacon and cheese and there you go! My new egg miracle is 1 large egg beaten with a fork to 1/2-1 cup of favorite grated cheese. Add to buttered skillet...spread thin! Cooks fast on medium, flip cook other side slightly. Cut to desired pieces...or fold over 1 time for a quick omelet for one or flip to a quarter size to eat between the bagels with no other meat. I eat it alone for my carnivore meals! 😋
