Wash and peel a few mangoes. Make sure they are ripe. I prefer using the Alphonso or Ratnagiri variety but you can choose any variety. Peel, chop and blend them to a thick pulp. The other ingredient can be mascarpone, cream cheese or hung curd. I have used equal amounts of mascarpone and pulp as the mangoes were very sweet. You can adjust the cream cheese or hung curd based on the sweetness of the mangoes. Combine them well and whisk them together till you have a smooth consistency. Transfer to desert bowls and top with some freshly cut mangoes and mint leaves. You can serve immediately or chill for an hour in the refrigerator and serve. Can be made ahead for parties.
