Pineapple is a very popular fruit in Asian culture. It is a symbol of luck and good fortune. And pineapple tarts are regarded as auspicious treats. They are must-have treats for Chinese New Year celebration.
If you love pineapple tarts like I do, this is an “easy” method to make at home using a blender and a cookie press.

Pineapple jam:
1 medium size fresh pineapple (600 g) or 2 cans (20 oz) of pineapple chunks
1/2 cup (100 g) or more sugar (depending on the tartness of the pineapple)
1/16 teaspoon or a pinch of salt
Dough:
1.5 cup (200 g) all-purpose flour
2 tablespoons (12 g) milk powder
2 tablespoon (20 g) corn starch
1/2 cup (65 g) powdered sugar
1/16 teaspoon or a pinch of salt
1 large egg yolk (18 g)
2/3 cup (150 g) unsalted butter
Bake at 325°F (165°C) for 15-17 minutes
