Easy Plum Cake with Meringue 💜💜💜
Ingredients for the cake (baking tray 23x30cm):
150g butter (room temperature)
100g powdered sugar
6 egg yolks
2 teaspoons vanilla sugar (or vanilla extract)
2 teaspoons lemon extract (optional)
grated peel of half a lemon (use organic lemonsl)
200ml milk
260g plain flour (sifted)
2 teaspoons baking powder
500-600g plums (about 25 medium plums)
Meringue Ingredients:
6 egg whites (at room temperature)
150g caster sugar
a pinch of salt
1 teaspoon of lemon juice
🔥 Baking: I baked the cake at 180 degrees C (up and down without ventilation) for 25 minutes in the first phase, and after spreading the meringue, I reintroduced the cake in the oven for another 20 minutes this time at 150 degrees C (the temperature must be lowered for the meringue to dry without browning too much on the surface)
