In today's video I walk you through a simple prep for a boneless prime rib roast. We'll go through removing the bones (which I use for making au jus), salt brining and tying the roast up so that it keeps its shape while on the grill.

Will you add more salt and pepper right before you cook it? Or is the brine all the salt you will use. Debating doing a beef rub on mine, but I don't want to make it too salty.

I don’t season again before cooking, if it needs more salt it can be added at the table when eating. I’ve done the dry brine with a beef rub as well and it works perfectly. Only use the rub though, don’t use the salt brine method and then the rub. Season it like you normally would with the rub and put it back in your fridge for a minimum of 2hrs - longer is better. You may need to touch it up when you pull it out but should just be spots where the rub has come off from handling.
