I just smoked some Alaskan pinks. I used pretty much the same recipe as you presented here. I'd never smoked pinks before. I have to say, they were delicious.
Went out yesterday and caught our limit, 2 per person, in less than 10 cast, in dry brine right now. I tried this with coho and they were too dry, the pink is much better, I guess its the oil in their flesh.
Great question. My Big Chief smoker temperature varies based on the outside temperature. Right now in the summer my Big Chief is cooking around 160-165 degrees F. When I'm smoking in November its much lower like 140, so I have to prolong the smoking stage.
