This makes me remember the first time I had one of these. I may have been 8 or 9 and we were on vacation in New Mexico. That was such a great restaurant and we really enjoyed this for dessert.

Girrrrrrrl, i noticed the ice cream IMMEDIATELY! That's the only kind of vanilla we like, it's the best! And we're twinning with the uñas, except mine are neon pink😂💗🥰

What a great Summertime treat! Next time, put your ice cream in the microwave for a smidge to soften it a little. Ooh! And, add a bit of carmel topping or dulce de leche before putting the top layer. BTW! Your nails are sooo pretty! 🤟💜✌️🍦🍰

I mix some Splenda sugar mix with cinnamon to sprinkle on top cause even y diabetic husband loves to eat these "tasty baby treats" as he calls them...lol
I grew up with sopapillas being the bread eaten with dinner… just a little honey dribbled inside a hole you bite in the corner. No other sweetness needed. Never saw it as a dessert until recently.
