This fudge is delicious and has a very pretty pink colour. Cut them into hearts shapes for a special Valentine's day treat!.

2 1/2 cups white chocolate (I used white chocolate chips)
7 oz jar of Marshmallow cream or Marshmallow fluff
3/4 cup salted or unsalted butter
1 cup sugar
3/4 cup heavy cream
pinch salt (omit if using salted butter)
1 tbsp cherry jello powder (flavoured gelatin powder)
1 cup chocolate chips melted for dipping or coating the top of the fudge (increase to 1.5 cups if you want a thick coating
1/2 cup dried chopped cherries
In a large bowl, pour in the white chocolate and the marshmallow cream, set aside.
In a large saucepan over medium heat, combine the butter, sugar, cream and pinch of salt (if using). Stir over heat until butter is completely melted and then bring to a boil.
Once boiling add in the tbsp of cherry jello and stir in.
Continue to boil for 5 minutes.
Remove from heat and pour over the white chocolate/marshmallow cream.
Stir until white chocolate is melted and mixture is smooth.
I had a few white chocolate chips that did not melt, but that's okay :)
Stir in the dried chopped cherries.
Line an 8x8" or 8x10" baking dish with aluminum foil and grease the foil. Make sure the foil hangs over the edges of the pan a bit to make it easier to lift it out of the dish.
Pour the fudge mixture into the foil lined pan.
If you want to cut the candy into squares, spread melted chocolate over the top, sprinkle with Valentine's day themed sprinkles if desired, and then refrigerate until set. Cut into squares.
If you want to cut into heart shapes, put mixture in the fridge to set and then cut into heart shapes. Dip the tops into melted chocolate and decorate as desired.
NOTES*****************************************************************
Some will ask "why not cover with chocolate and then cut out the hearts?"
I found that if you tried to cut the heart shapes out AFTER coating with chocolate and letting it set, the chocolate smears down the sides of the hearts and the tops crack.
