Easy Vanlife Recipes | One Pot Jambalaya | Camp Cooking
Today I wanted to make something tasty but because of the wind I wasn't sure as to what I wanted to make so I dug into what needed to be cooked up in my van and decided to make a one pot jambalaya using items that were easy and found at Aldi or Walmart. Come cook with me!!

O love the meal!! Made it last week!! Today went grocery shopping and on way home seen a friend's wife who grows veggies and sells at a roadside stand and it was open!! Fresh tomatoes, cabbage, bell pepper and carrots!! Later this week is a Hamburger Veggie soup!! Because she always gives me what she calls, the ugly veggies at a very reasonable price!! She does use them herself, but gives away to friends she knows who will use them also!! And yes, we always come to price agreement!! Because it does cost the farmers to grow the food!! Plus even when I'm driving OTR and I see those side stands, I always tried to stop and buy something!! Most are on the Honor system, and always leave a little more then what they ask for!! Because I was/&still appreciate the work they put in!! Love your Jambalaya, funny that's how I make it too!! So good!! Thanks for the video!!❤

This looks delish! I use that shortcut of adding the peppers in, rather than stuffing them too. My dad doesn't have use of one of his hands (Stroke) so cutting isn't an option. I always cut up his stuff, but I know deep in his heart he hates that. Doing it as a one pot gives him a little of his dignity. Especially when I say I'm doing it that way because it's just so much easier for me than dirtying all the extra pots and running the oven......

It's all about preferences and choosing your battles. I have a "full" kitchen in my shuttle bus, but I see nothing wrong with using a decent box mix as a starting point for a meal. Those boxed goods save time, space and weight in my bus pantry. I do forgo margarine but it's purely preference. I don't like the mouthfeel and it's unreliable for baking. But if someone's cooking for me I will not complain, I'll be grateful!

It was really HOT TODAY..97. I just couldn't face cooking outdoors. Gave husband tiny tomatoes..sliced banana . Peanut butter n blackberry jam sandwich. Not a great meal but semi.nourishing. he did have a decent meal earlier ...country fried steak..mashed potato with gravy..tossed salad

How do you clean your reusable baggies? I got some (after watching your channel), but I find them to be very difficult to clean without a dishwasher (the corners, ugh!). So now I use the disposable sandwich baggies, and put that baggie inside the reusable bags. Same leak-proof effect, and easier to clean.

I did two different things. The first of which is I clean them out with a sanitizing cleaning wipe for dishes. That usually helps me get any of the crumbs that might be hanging out in the corners then I take soap and water and I go in and I create a little pocket That I can seal the bag and shake it to agitated similar to dishwasher. That drain the water and put clean water in and do the same thing several times just a very small amount and then I let them dry by putting them over a water bottle so that they can completely release the water by being open, follow up by going over with one of my Norwex cloths just to make sure everything is nice and dry

Sadly, my go-to has been a Boost (nutritional supplement drink) and string cheese. I've lost a LOT of weight from not eating. But on my recent days off from my workamping gig, I drove 100 miles to find a Road Pro! I really think it's going to be a major game changer for me. I can pop in one of those heat and eat meals on my way to do camp laundry, and eat a hot meal while I wait for the laundry. When I've enjoyed several good meals, I'll be sure to let you know my favorite!

Yum. I love jumbalia but it’s always too spicy. I can’t have spicy 🌶️ 🥵 due to stomach issues plus i never have enjoyed my tongue 👅 being on fire 🔥 but that is a very quick meal which quick is my favorite speed. Lol.

This is called a RidgeMonkey Deep Pan, it is produced by a company in the UK. They have them available now on Amazon, only a recent development.

i have a nissan nv200 2020 as well, about 70k miles and about to head out on our vanlife jounrey. How has yours held up? After i got a nissan a year or so ago many told me their nissan was unreliable...ugh lol

I haven’t had any issues with the van itself however it has been a struggle for them to find parts, even though the body style now almost identically resembles the Chevy express
