Recently started the vegan diet, cant believe how good I feel now. Anyone out there thinking about trying vegan should at least test it for a week or two. Thanks for the great recipes.

I made it today for my family of 3, everyone loved it including my 23 yo son who is not vegan. I changed the tofu a bit to fit my husband's diet who is a diabetic by using Gochujang chili paste, miso paste and soya sauce without the agave. Thanks Rose for the recipe.🙏
What are the chances, I did the exact same recipe with tofu bacon 2 months ago, slightly different sauce as I used Just Egg with mine. Will have to try out your sauce. Love vegan carbonara and tofu bacon is so delicious.

For a creamy/ carbonara type pasta I just add some hummus (usually get yellow label ones in supermarket) to the pasta with some of the starch water. Then will sometimes add some seasoning, soy sauce and sometimes kala namak for slight egg flavour reminiscent of authentic carbonara. If there’s more effort I’ll sautée mushrooms or bake tofu slice in paprika/ soy sauce mixture.
Tried making this, but my cashews went bad so I decided to experiment and use some miyoko’s liquid mozzarella instead. Came out great. My only real gripe is the lack of specificity regarding amounts/proportions. Ended up putting way too much liquid smoke on my tofu and not enough soy sauce. Though I had never cooked with liquid smoke before so its not too surprising I messed it up.
Real carbonara sauce being basically eggs and pasta water, i strongly recomand using kala namak, it shouldn't be optional or it won't taste like carbonara at all.

Hi! To make extra firm tofu even firmer (perfect for stir-fries), freeze the tofu for at least 24 hours, then thaw it when you're ready to use. It changes the texture and makes it super firm!
It's not, it's the vegan version, which mimics the flavor profile pretty accurately. The modifying word "Vegan" is right in the title. Don't know how you missed it.
