this is something i read a year or so ago, don't know how true it is, but here goes: the reason NYC bagels are boiled before baking is due to anti-semitism; the Jewish people were told to 'wash' their rings of dough in lye (even today considered a very harsh cleaning solution), before putting them in the oven. Lye had the side effect of making the bagels chewy, which is what NYC bagels are well-known for. Bagels in Europe are not boiled, just baked.

I'm born and raised in Tulsa, Oklahoma and just recently discovered the delicacy that is an everything bagel with lox, tomato and onion... I'm sure my local spot is nothing compared to NYC bagels but I tried to recreate it with grocery store bagels and it was just meh. It's one of those things best enjoyed on-site, I guess. 🤤🤤

NYC bagel v Montreal bagel. NYC uses malt syrup in the boiling water Montreal uses honey in the boiling water That's the only significant difference Montreal doesn't use salt The size is different. NYC bagels are obviously better Fight me

The bread hierarchy: Pizza is best in NY. Bagels are best in Jersey. Now if you get a bagel at Russ & Daughters it should be an everything bagel scooped with caviar cream cheese, and either a scoop of hot smoke/cold smoke salmon OR a few slices of Gaspe Salmon OR Pastrami salmon, then some capers, red onion and tomato. It’s excellent. They got a new bagel supplier a few years ago which are much better but still not as excellent as a Jersey bagel. That sandwich though is memorable.
