I am from Varanasi and if you don't try the most special breakfast food of Kachori-Sabzi-served with jalebi you will really miss out on a great experience. Sweet and savoury all in one. Also Thandai is a drink that originated in Varanasi but is now enjoyed pan India during holi, you should try that as well.

Street food is very famous in all major cities of India though the most popular are Indore, Ahmedabad and Bangalore. You should make it a point to visit one state at a time when in India and cover maximum cities along with the street food of that state. You will find the difference and also enjoy the same. My personal favourites are Jodhpur, Haridwar, Vrindavan, Varanasi and Kolkata.
You should try malaiyo. Malaiyo or Mallaiyo is basically flavored milk foam/froth or cloud served in a small earthen bowl, garnished with Pistachios and Almonds. ... So if you want to taste, authentic melt in mouth Malaiyo along with Saffron Milk you have to go to narrow lane of old Banaras, specifically Chaukhamba or Thatheri Bazaar. ❤️❤️❤️
I am also from Varanasi so i think yes u are very right that one should try Malaiyo in Varanasi(Outside Vishwanath Temple,Vishwanath gali...)and many more places she can find that extremely delicious one
go to roma's cafe.They serve good pizza. kerala cafe for amazing south indian breakfast. try malaiyo at chowk. spinach chat too. go to kachodi gali for amazing kachodi and jalebi for breakfast.

When I got married and the driver we hired during marriage I bought him 4sets of pant and dress and shoes... And allowed him to have dinner with all members of both sides of family at high-end Chinese restaurant ...i also gave everyday a big tips... He did not expect... Although the whole India is a paradise for foodies, but in Varanasi you will find a lot of variety to eat, especially for vegetarian people. You should also try South Indian food
