Huge thank you to Our Jungle Camp (www.khaosokeco...) at Khao Sok, Thailand, for hosting me for an amazing garden and foraging experience, and for cooking some outstanding Southern Thai complete vegan / plant based food! #Thailand #vegan #vegetarian
I was very excited to be at Khao Sok National Park, what I think is one of the most beautiful places in Thailand - an amazing rainforest. During our time there, while staying at Our Jungle Camp I was excited to see they had a full garden, and were encouraging local, organic vegetables from their garden. They took me on a tour of the garden and we picked some of the local fruits and vegetables, and then went into the nearby forest to pick some fresh wild ferns, which are very popular in Southern Thai food. I have eaten ferns so many times, and I love them, but it was my first time to harvest them myself before eating them.
With the fresh harvest, we headed back to the kitchen and cooked three different Southern Thai foods - everything completely plant based / vegan / vegetarian. A fern salad with coconut cream and chilies, a southern Thai curry of turmeric and lime juice with tofu and mixed vegetables, and finally stir fried luffa with shiitake mushroom sauce.
Southern Thai food is known for being spicy, and this was a meal big on spice, and huge on flavor!
