In this video we show you how to break down an elk using the gutless method by yourself. If it is warm out I will usually gut (field dress) the animal before I bone it out in order to help the carcass cool faster. I processed the elk and filmed the video solo so I apologize for the limitations of this video. Still some good info for you here.

My butcher told me a very good tip he advised to use to remove the maximum amount of those hairs that always get on the meat no matter how careful you are! Use pieces of cheese cloth to rub over the meat and the hairs will stick to it! I tried his method and so far I have found no better way to get those hairs off the meat!

Hey quick tip, start from the neck down and follow the grain if the hair. You won't get as much loose hair on the meat that way. Not that you did, just in general it helps.

Thank you for this. It was well done and well explained. Will you trim off the fat layer from the rib meat when you process it? I know you were taking video, but typically, how long does it take you to do this method?

I've always gutted my elk and am researching how to do a gutless outside-in method. This was SO helpful! Thank you. (I'm actually going out solo today so this may come in handy. Fingers crossed...)

Fascinating, thanks, very informative. Here in England there are no restrictions on shooting Moose. Probably because no one has seen one in over six thousand years. I'll post a video if I do bag one. Seriously though that was very informative. Cheers.

If I'm field boning and quartering a big antlered animal like a moose or elk, the first thing I do is get the head and antlers off the carcass. Then I can roll that sucker back and forth a little more easily. Great video! Nice to see one shot in realistic conditions (not everything is perfect)

John Dea thanks for the note. I always left the head and antlers on so I have some leverage to roll it. But maybe I’ll try and take the head off next time.

@@EatWildDylan I know what you mean, especially if you're gutting an animal. If you can get the animal on it's back with the antlers against the ground it will keep the legs up in the air, you can loosen up the guts, then you can twist the antlers to roll the animal over and dump everything out. Lift up the leg and start cutting from the underside of the leg following the natural contour of the joint. If there are no trees, place the end of the leg on your shoulder.

Thank you for sharing your techniques,, nicely done ,,will pack a knife sharpener from now on. How do you hang the meet when you get home and for how long? before you put it in the freezer??

I'll hang meat for up to two weeks in ideal conditions. Ideal conditions are less than 6 degrees celsius, dry, with good air circulation

Do elk have dew claw bones? The pin bone above the actual dew claw on the front, like moose and deer.

Im new to hunting and was wondering what approach works best gutting or not. Im not worried about the butchery as I have 6 years of whole animal butchery. But removing the cape and dealing with the guts is a foriegn thing to me. Would removing the cape from the belly make for a better mount? Sorry for the questions curious mind. Thanks again for your understanding.

The taxidermists that I've dealt with have all told me the same thing, just make sure you give them enough hide to work with, making sure they have more than enough is better than not enough. My first elk, I came up short and they had to use hide off of a different animal, something to keep in mind.

I alway harvest the heart and the liver. I love roasting the heart. The liver can be more or a commitment, but I find a way to use everything.

Plastic bags is a fun way to ruin meat. Pick up a set of game bags dude. You need that meat to be able to breathe and get rid of moisture.

B R I agree with the importance of storing meat in proper game bags. The plastic bags are a temporary measure to keep it clean while you are packing it out. From the field, into the pack, into the boat or truck creates lots of opportunity for the meat to get contaminated. Once we get it back to camp and on to the meat pole then we swap over to cotton game bags to keep the meat from spoiling. The system has worked well for us. The key is get the meat from the field to the meat pole quickly. Usually takes us 4-6 hours from the elk going down to being hung with game bags.

first of all that isn't "deboning" that is called quartering. Second of all that wasn't the tenderloin. Tenderloins are on the inside of the spine inside the stomach cavity.

It’s always a challenge to manage the environmental conditions when dealing with an animal. In this case I am working by myself, in a dusty burn, and on a extremely steep slope. All of which make for a more challenging job. The other consideration is the time it takes to break an animal down. Where we are hunting there a many grizzly bears and it is warm out so it is important to move fast to get the animal out of the woods and cooling down. So I move fast if I can. Making the movie slowed me down a bit.
