Eddie’s Garden Variety Tomato Jelly
1 cup tomato purée
1 1/2 cup sugar
Juice 1 lemon
Pinch salt
1/8 tsp nutmeg
1/8 tsp cinnamon
3/4 tsp balsamic vinegar
1 pouch liquid pectin
All but pectin in pot bring to rolling boil. Remove from heat. Add pectin. Bring to boil 225° for one minute.
Ladle into cans 1/8” head space minimum , wipe rims wilt lemon juice paper towel. Put on lids. Hot water bath process 5 minutes.
Multiply up as many times as necessary.
Homemade tomato purée.
Boil, peel, and Destem tomatoes. Put in blender and blend until completely smooth. Run through strainer or kitchen screen to remove all seeds.
