Egg Biryani
Ingredients:
Boiled eggs
Potatoes
Rice
Bay leaves
Cinnamon
Cumin seeds
Star anise
Cardamom (black + green)
Clove
Black pepper
Biryani color
Mint leaves
Tomatoes
Biryani masala
Salt
Green chillis
Onion
Yogurt
Garlic and ginger paste
Procedure:
•Heat oil in a pot and add boiled eggs in it. Fry the boiled eggs until they are golden brown and drain them.
• Soak basmati rice in water for later use.
• Add onion in the oil and fry them until golden brown.
• Add whole spices - cinnamon, cardamom, star anise, black pepper, bay leaves, cloves and cumin in the oil.
• Add garlic and ginger paste in it and fry till fragrant.
• Add biryani color coated potatoes in it and let them cook for few minutes.
• Add tomatoes, mint and chopped green chillis in it and mix them well.
• Add yogurt and biryani masala in it and mix properly. Cook for 5 minutes.
• Add whole green chillis, salt and eggs in it. Cook for few minutes.
•Take water in another pot and bay leaves, cumin, clove and black pepper and small amount of salt in it. let the water boil.
• Add soaked biryani rice in the boiling water and parboil the rice. drain and set aside
• layer the rice with egg curry prepared early, fried onions and biryani color. Give 2-3 layers and then the remaining rice on top. Add the finishing touches.
• Allow steam to develop, then lower the heat and let the flavours meld.
• Enjoy!
