You can make this delicious Caramel Egg Custard Pudding at home in no time.
For Pudding:
Eggs / Ande - 4
Sugar / Shakar - 10 tbsp (standard measurements)
Full Fat Warm Milk / Balai Wala Garam Doodh - 1 1/2 std cup
Vanilla Flavored Custard Powder - 3 tbsp custard powder
For the Caramel:
Water / Pani - 1 1/2 tbsp
Sugar / Shakar - 5 tbsp
Procedure:
1. Break eggs in a bowl. Beat thoroughly and keep aside.
2. To another bowl add 10 tbsp sugar and 1 1/2 std cups full fat warm milk.
3. Mix well till sugar is dissolved in the milk completely.
4. Allow this milk to cool.
5. Add 3 tbsp vanilla flavored custard powder to this cold milk and beat well till no lumps are left. Remember to add custard powder to cold milk only.
6. Now add beaten eggs to milk and beat well. Keep aside.
7. To set the pudding, take a steel box with a lid.
8. I have made and set caramel in the box itself. You can make caramel in any other pan and then add to the box.
9. For the caramel, keep the steel box on the stove.
10. Add 1 1/2 tbsp water.
11. Add 5 tbsp sugar.
12. Keep on medium flame to prevent burning. Avoid stirring to prevent the crystallization of sugar. Swirl the box to prevent burning.
13. When the caramel sauce attains a thick consistency and when it attains a light brown or honey colour, switch off the flame.
14. Be careful to attain that color without burning, therefore, immediately lift the box away from the stove.
15. Spread the caramel evenly by swirling the box while it is still very hot.
16. Leave this to cool for around 10 min.
17. When the caramel sauce hardens, pour the egg and milk mixture.
18. Close the lid of the box tightly.
19. Add 250 ml water to a pressure cooker.
20. Place this box in pressure cooker. Pressure cook on medium flame for exactly 12 min.
21. When the pressure settles, remove the box carefully and allow it to cool and then keep in the refrigerator for 2 hrs.
22. Run the knife along the sides of the box to facilitate the pudding to slide wholly.
23. Place a plate on the top of the box and turn it upside down so that the pudding slides down easily.
24. The delicious pudding is ready. Serve chilled for the perfect taste.
