Egg Masala Curry Recipe:
Ingredients:
6 boiled eggs
½ tsp Kashmiri chili powder
¼ tsp turmeric powder
2 tbsp oil
1 large onion, chopped
1 tbsp ginger garlic paste
2 medium tomatoes, chopped
2-3 dried red chilies
1 tsp salt
1 tsp coriander powder
½ tsp cumin powder
½ cup cream
½ cup water
Chopped chili and fresh coriander leaves for garnish
Preparation:
Prepare Eggs:
Peel the boiled eggs and coat them evenly with ½ tsp Kashmiri chili powder and ¼ tsp turmeric powder.
Fry the eggs in 2 tbsp oil until lightly golden brown. Set aside.
Prepare Onion Tomato Paste:
In the same pan, cook chopped onion until translucent. Add ginger garlic paste and chopped tomatoes. Cook until softened, then grind into a smooth paste.
Cook Onion Tomato Paste:
Heat 1 tbsp oil in the same pan. Add dried red chilies and onion tomato paste. Cook covered for 5 minutes on low heat.
Add Spices:
Uncover the pan and add chili powder, salt, turmeric powder, coriander powder, and cumin powder. Cook for 3 to 4 minutes on low heat.
Add Cream and Water:
Pour in cream and cook for 2 to 3 minutes. Add water to adjust the consistency.
Final Assembly:
Add the fried eggs to the curry mixture. Cook for 2 to 3 minutes.
Garnish with chopped chili and fresh coriander leaves.
Serve:
Serve hot with chapati, naan, or rice.
