Eggplant parm was my favorite dish before going [mostly] vegan...I'm glad you mentioned the option to bake the eggplant. Another tip for a great eggplant parmesan [from my late Italian mother in law] when layering, add minced raw garlic on each eggplant layer...takes it to another level!

Made it as soon as I got my plants only kitchen book and we love it! Frying the eggplants was a little bit tedious but we made a big batch and frozen half of it for the next week.

I can never understand how people can wait for any bechamel-based dish to set. There is just NO WAY to resist XD Same with lasagnes or moussaka (vegan of course)- too delicious to be set aside for even 10 mins ;P
