Endless Days of Summer in a Rural Bulgarian Village (Coping with the Heat, Making Cassis)
It is very hot here at the moment. It has been 42°. These are some of the ways we try to keep cool and cope with the heat in as simply and ecologically friendly a manner as possible.
This is the recipe for the Cassis
HOMEMADE BLACKCURRANT CASSIS RECIPE
Ingredients
* 500 g blackcurrants
* 170 g granulated sugar
* 500 ml brandy or vodka - we used vodka (no need to buy an expensive one)
Method
1. Wash the fruit and throw away any of the over ripe ones.
2. Put the black currents in a large jar or wide mouthed glass bottle.
3. Add in the sugar and brandy and stir well.Cover and stand the jar on a sunny windowsill
4. Shake the jar once a day
5. Once it starts to ferment - probably a week or two - put it in a dark place
6. Leave it for at least a couple of months and no more than four months and then strain into sterilised bottles.
You can actually use the fruit and ice cream - remembering that by now it will be quite alcoholic!
