This is a really helpful video. I just started to cook in U.S., and I planted some fresh herbs I often use in home. I also planted parsley, thyme, mint, and dill but actually don't know how to use them lol. I think those parsley you saw Chinese use a lot is 香菜 (Coriander), rather than really parsley. They are very close, but the parsley's flavor is stronger in my opinion. Asian don't use Genovese Basil that much but we use a lot of Thai Basil, Holy Basil, and Lemon Basil, which bring more rich flavor and worth to try.

Thyme is great for chicken but also has many other uses. Dill is delicious with fish. You can see me using some of these herbs in other videos. @@WhosHU I am a Taiwanese. There is a famous Taiwanese dish call 3-cup chicken, which are 1 cooking rice wine, 1 sesame oil, and 1 soy sauce. This dish has rich flavor, and we use a lot thai basil to balance it in the end.
In some restaurants in China, people do like to use parsley to decorate the plates and of course they use cilantro to decorate the taste of the dishes.

In Austria we use fresh chives for many things. Most often it is used freshly to decorate a soup or other dishes. Also sometimes it is added into dumplings, fried potato or salad. Personally I love to put it in home made herb butter.
Mostly when a chef says "season to taste" it means add salt (and often pepper) to your liking. Everyone has different taste for saltiness of food, therefore it's easier to let people decide themselves.
