We are closing the "La Maison Arabe Dada Series" (www.lamaisonara...) with a must: Moroccan Mint Tea prepared the traditional way with Soukaina.
INGREDIENTS:
-- For a large Moroccan teapot --
A large handful of fresh mint
2-3 teaspoons loose green tea (Gunpowder or Chun Mee)
3 tablespoons white granulated sugar, or to taste
Boiling water (to fill up 3/4 of tea pot + 2 extra cups for the process)
STEPS:
1- Boil the water.
2- Add the green tea to a large teapot and 1 cup of boiling water. Let rest for 1 minute then pour the water into a cup. Set aside. In Morocco, this tea water is called the "spirit of the tea", which means it contains the first burst of flavors from the tealeaves.
3- Add another cup of boiling water to the teapot, swish around, then pour the water into a cup. Discard. This step is to clean the tea and you will notice that the water is darker the second time.
4- Pour back the "spirit of the tea" into the teapot. Add boiling water to the teapot until it is three quarters full.
5- Place the teapot on the stove and, on low heat, bring the tea to a boil.
6- Remove the teapot from the heat and immediately add the mint leaves and sugar to the teapot.
7- Mix all the ingredients by pouring the tea into a glass and then pouring it back into the teapot. Repeat this step 2-3 times.
8- Serve immediately. While pouring, hold the teapot high above the glass, to get the distinctive foam of Moroccan mint tea!

it's like a rice pressure cooker. I usually cook spicy white beans in it or other Moroccan meals. It really brings out the flavors. Even as a vegan, it still gives you loads of flavors. You should watch Alia s older videos there tones of videos about cocout. Try potatoes with pickled lemon, olives and Moroccan spices its bomb ask alia about it. good luck and congrats ♡

I do boil tea first then add mint and sugar, some add sugar first then mint, It all depends. Morocco is large and many of us come from different regions, each has its own details but we all agree on the basis

This is one of my favourite teas but there is another Moroccan tea blend that is even better and I am going crazy trying to find the recipe. It has several herbs including louiza (lemon verbena), Star anise, fennel, mint and something else - if you anyone has any idea of what I am talking about please please let me know. There was a great Moroccan restaurant in Dubai which used to make it and unfortunately they ended up closing and I forgot to write the recipe down at the time. Sorry but you have got this slightly wrong. Those are not teaspoons, they're tablespoons. A teaspoon is 5ml a tablespoon is 17ml. Thanks for the recipe though it was really useful.

As a foreigner I've been searching online for the best way to make Moroccan tea , many people add sugar and mint before boiling the tea but then in the comments they mentioned you gotta add those after the boiling part so I tried both and I tell you that adding sugar and mint before boiling the tea will burn the mint and sugar. So add you mint and sugar after boiling the tea just like in this video

The longer you wait the darker and better it gets. I let it soak for a couple hours. Or I make the tea in the night, so the next day when I wake up I only have to reheat the tea.

Thank you Alia! I've tried to do this tea sometimes, and it's delicious, but I didn't know about discard the second glass. Also, I've done it using peppermint leaves (Is "peppermint" the word in english?), and I want to know what do you think is better (mint or peppermint)?

you can use mint or peppermint depending on your taste. However, the quality of mint absolutely affects the taste of the tea. I live overseas and I was never able to get the same flavor. Moroccan mint is fresh and so flavorful!

so why boiling water on the gunpowder? it should be around 75 degreees or is intentionally bitter?

If you do not bruise the mint it will not relase oil soluble oils to the tea.

it has a stronger flavor than regular green tea. It often looks different than regular tea leaves because it'll come as 'pearls' where each 'pearl' is a whole tea leaf. Not always, though.

1 - It helps cool the tea. 2 - It brings more oxygen into the tea to give it more taste. 3 - It's spectacular, fun and creates a layer of froth.

It’s actually pretty quick! 1 minute for the spirit, 20-30 seconds for the rinse, then you can skip boiling the tea (most tea nerds would probably recommend not boiling tea anyway even though it appears to be part of the Moroccan tea tradition-I’ve tried it both ways and find the difference negligible), add sugar and mint then pour into cup and teapot three times… can all be done in less than 5 minutes!
