If we have to choose a dish representing Chinese cuisine, I think braised pork (Hong Shao Rou) is a good option. It is a dish made from caramelized pork belly simmered in soy sauce. It appears in various Chinese cooking classes, but braised pork taste in different styles is different. It really is a traditional dish.
