Japanese bladesmiths have long favored chef’s-style knives with blades that are ultraslim-that is, sharpened to about 15 degrees on either side of the blade-and for good reason: In addition to being thin and lightweight, these blades have a supernarrow cutting edge, which helps make them razor-sharp. We’ve also come to favor a thinner edge. After years of testing dozens of knives, our repeat favorite is from Victorinox, a Swiss-made knife that is sharpened to 15 degrees on either side of the edge, allowing it to push and slide through food more easily than do more traditional European blades sharpened to at least 20 degrees.
To maintain that narrow edge, we use a tool specifically designed to sharpen a blade to 15 degrees. Our favorite models, both from Chef’sChoice, are a manual and an electric sharpener that each do a fine job of restoring an ultrakeen edge to an Asian-style knife. But in recent years the trend toward slimmer knives-and slimmer knife sharpeners-has spread west, as European manufacturers including Wüsthof, Henckels, Messermeister, and Mercer have launched their own 15-degree knives and sharpeners. (In fact, Wüsthof and Henckels have discontinued their 20-degree knives.) We were curious to see what these new sharpeners had to offer-and were especially eager to test the claim of one that it can even hone a 20-degree knife to 15 degrees.
So we rounded up nine models (including our previous favorites), five manual and four electric, from both Western and Asian manufacturers and priced from roughly $20 to $200. To evaluate them, we bought nine of our favorite Victorinox chef’s knives and assigned one to each sharpener; we then dulled the knives identically and sharpened them according to manufacturer instructions. To assess sharpness, we slashed sheets of copy paper and sliced delicate tomatoes, repeating the dulling, sharpening, and slicing process four more times with multiple testers.

the question does arise though... if it functions so well, the chef's choice xv, is there a need to update? is there one that does 20 and 15 degree equally well? because that would be the best as I'm about to buy straight edge steak knives at 20 degrees and chef's knives at 15 degrees... i'd hate to buy both.

@@kik1rik1 Chef's Choice does a model called "The Chef's Choice 1520" that you can select between 15 degrees and 20 degrees. Hope this helps.

Same, I am a chef and I just bought the tripod edge sharpener and resharpened all my knives and they are sharper than ever. I don’t have time to use a whetstone, and frankly I am not interested or passionate in that art. I am however passionate about cooking, and this sharpener is great!

I used to struggle with various water stones trying to do all this manually. Waste of time and shaky results. I just picked up the Chef's Choice 15 they recommend here and it's amazing. In one minute you can turn a totally dull knife into a perfect blade. Totally worth the $.

I'm not an expert, but I heard these reduce the life of the blade faster than whetstone. Maybe a metallurgy expert can chime in. I'm no master knife sharpener, but I got the whetstone sharpening down on the first try. My wife couldn't figure it out though, so maybe I have a competency bias.

This is really late, but if you tried, whetstone sharpening is not hard. After practicing fro a week on a cheap $20 whetstone, I could get my knives to cut grapes sideways with 1 hand.

Thanks so much for this review. I have a couple of manual sharpeners AND a whetstone (not cheap) and BOTH my husband and I have tried to sharpen so many knives. We consume lots of foods that need to be chopped and its so frustrating. We've even had our knives professionally sharpened BUT they lose their edge so quickly. FYI we do not have cheap knives. I have 4 Victorinox knives, some are R,H. Forschner Victorinox over 25 years old and my newest is a 10" Chefs knife. I was concerned that my older Chef's Choice 433 diamond hone (found out this is a 20º) might be putting the wrong edge on my knives so I contacted Victorinox (online chat) and they informed me that ALL of their knives are ground to 20º, however honing to 15º would not hurt and assured me that is is just a matter of preference.

I'd like to see a test between your best options and the Ken Onion edition of the Worksharp sharpener. It would be really interesting to see because the angle is not as harsh, it's more rounded and may slice even better.

I absolutely love ATK. I record their shows. I have their cookbook. I buy practically everything they reccomend but no one in their right mind would sharpen a $200 plus Japanese knife in an electric sharpener.

I think this is great advice for the average consumer, but to those looking to really step up their edges on both knives and tools, there are options that will produce vastly better edges. A good set of stones will out last a knife and while they require some practice to get a good edge, can produce literally shaving sharp results at a fraction of the price. Like most people are realizing, the Japanese knife culture had a lot figured out a long time ago and sharpening regularly on stones is the next step for Western knife users.

I don't know why there is such a mystery about sharpening knives, a stone and a steel that’s it.! Plenty of teach you how vids. Anyhow I subscribe to this channel and I buy kitchen equipment based on their reviews. They are professional sincere and thorough. My latest addition the Quisinart food processor. Being the vegans we are it gets a major workout each day and it handles it just fine. A breeze to clean and it was priced well. Thank you keep up the great work.

I have the winning manual sharpener. Even on a deeply dinged cheap old knife it did a great job sharpening it. It's not perfect, but that sharpened knife chops vegetables better than my Wusthof chef knife (though the Wusthof is better for meats).

I like my miyabi set better. The angle is 9 to 12 degrees and comes hair shaving sharp out of the box. The edge retention is very good as well

Glad they chose the sharpener I already had. Confirmation bias. Fifteen degrees isn't panacea. How about 12? 10? It's a compromise between edge life and sharpness.

The CC Trisor---it will put 3 bevels on the blade. Do you want that?? Even if it does seem "sharper" with 2 new bevels. I'd get the non-Trisor models. You didn't mention if the electrics put hairline scratches on the side of the knife above the cutting edge. Does it? Some claim them do. Though I have seen examples where there were none. Burrfection (Ryky Tran) claims the Wusthof version is fine for knives with a HRC below 60. Would have liked to see demonstrations. Showing us the end result. A close-up of the side of the blades and cut tests (the typical sheet of paper cut test and the tomato)

Does sharpening a knife with an electric sharpener take off a lot metal. Instead of a knife lasting 25 years with manual stone sharpening will it only last 10 years because its being shaved into a smaller knife?

It depends on the sharpener and how often you use it. The old style with grinding wheels stripped off a lot of metal.

Why would you need a knife collection with different edge angles? The knife world (kitchen) has agreed to one angle.

I've used the lansky system when an exact angle is desired for years, and it works great it's just a bit tedious. Always wanted an electric sharpener but back in the mid 90's there was only crappy 'Knife eaters' as I called them, Haven't actually looked into or trusted electric models with sharpening my Ichiro Hattori blade set, but I'll give the winner a try as it's so cheap. I had one of the original "Chefs Choice" electric diamond sharpeners. I gave up with it. Maybe the new ones work better.

Let's just tell it like it is, electric sharpeners are preferred in my opinion because I can run the knife thru thru the slots a couple of times and it's ready to go. To sharpen a knife properly on a whetstone requires the skill and steady of hand of a surgeon. Plus, who really wants to go through all this mess and fuss? For kitchen cutlery, it's the electric sharpener for me.

The 15 deegre sharpener will reprofile your bevel from 20 degree to 15 degrees.

@@nesnyses That's correct. If you use a 20-degree sharpener on a 15-degree knife, it's not ideal, but in a pinch it's better than a dull knife.

That's great for chef's knives, but how easy is it to sharpen smaller blades, or serrated blades like a bread knife? I have a hawkbill paring knife that I adore, will this keep it sharp easily?

I own european style knives , japanese knives etc... Sharpening stone, steel hones .. from my experience an automated sharpener need to be compatible with your knives shape. My Victorinox isn't happy with my sharpeners, while my " Sanelli " gets an optimal sharpness in seconds with my chinese sharpener. It's about wich knife you use 👌👌👍👍

Cutting styles differ Western vs Asian. So, how important is the grade to the cutting style? I read that Japanese blade tips were not exactly triangular, it's more angled on one side than the other. Santoku knives are a merging of the two styles. So where would a santoku style be best used in vs a western chef knife? At home I love a nikiri and a 7" chef knife.

+Petite Poulette I think what you are referring to is what's called a convex grind. A knife with a flat bevel is easier to achieve with most stones but the knife edge isn't as durable. A convex grind curves to the blade edge like a pointed U, making the cutting edge more durable and helps to push away material as you cut. Most sharpening stones do a bevel hone or like a V, and there's nothing wrong with it. You can get a knife really sharp. But after some research I have stumbled across the Work Sharp Ken Onion Edition sharpener. It does a convex grind and has adjustable guides to get angle right on just about anything you want to shaprpen. Even scissors. It uses varying degrees of abrasive belts. Right now it's out of my price range and I use the Lanskey system which will do any knife as well, and even re-profile blades that are really damaged. Most people I have seen online with very fine Japanese knives use Japanese wet stones of varying grits and holding the blade at a precise angle slide the blade back in forth with plenty of water. Other stones may use honing oil. What's important is the blade angle angle and holding the knife consistently at that angle. Different knives may have different angles. European cooking knives as they mentioned maybe 15 degrees, while many pocket or utility knives are 25 degrees. Getting the angle wrong can destroy cutting edge put on at the factory, then you have to re-profile the blade edge. Which anyone can do with practice, time, and elbow grease. The narrower the blade angle the less durable it will be. A razor blade cuts really good but goes dull quickly because of its narrow blade angle. A pocket knife with a 25º to 30º edge will cut card board quite a bit until its dull. You can bring a knife through varying stages of sharpness. Leaving a bit of roguhness to the edge maybe ideal for butchering or cutting meat. However, taking a knife edge to shiny sharp with diamond stones and/or stropping with leather and green honing compound can yield a razor blade like edge. Which would be good for tomatoes, onions, and fine things. The shiny sharp edge will require more maintenance.

In the end, I decided on a tri-hone stone set from Dan's Whetstone in Arkansas for about $50. Good old fashion oil stones. Made in the USA. If you can chop an onion, you should be able to swipe your knives at 15 or 20 degrees over a flat stone to keep them sharp.

yourfullofsheite your opinion; more recent studies have shown that putting fluoride in the water doesn't much all that much. Putting it in toothpaste is more important and even then I question how much. I have perfect teeth, no cavities, no issues. I don't use fluoridated toothpaste, I use peroxide for mouthwash, hell I'm to the point I don't even use an electric toothbrush. My dentist is amazed every time I go in, which thankfully is like once a year. Although prior to recent I hadn't been to the dentist in 10 years. You're welcome to your opinion, but I'm telling you there is more to dental issues than if we put fluoride in the water.

There seems to be a thing about blades being perfectly sharp and with a neat edge. I can't help but think a jagged edge would cut better as it'd have a fine saw-tooth ability to pierce.

@@mdsuave13 It would be believable to have an optimum blade between the two 'extremes'. Any metal knife blade will have a grain which will create very fine saw teeth. Any edge type can be used to slice; saws being frequently used to slice. I think I prefer saws - as they apply more pressure to the thing being cut without applying more pressure to the tool.

Knives don't come out of the box ready to use. They are set to be finished by a professional to set a perfect edge. I get my knives done at a local restaurant supply place that charges based on your total purchases, otherwise, it is a cost per inch of the blade.

Hand sharpening using water stones is the preferred method but it does take practice and is not very practical for your situation. Regardless, stropping on a leather strop is the final step for a super sharp knife! Just ask Bob Kramer. If the knife won't do a PUSH cut through a piece of paper it isn't as sharp as it could be.

I'm sorry you were disappointed, but I wonder if you followed the steps in the manual? They're fairly clear and specific about what you need to do in terms of exactly how fast you should pull it through each stage, number of passes at each stage, and how to feel for a burr before moving to the next stage, etc. I have usually found that folks who try this sharpener and don't like it have not followed the manual. It doesn't particularly work if you just pull the knife through randomly. (If you still own it and can't find the manual, you can download a pdf from the Chef's Choice website.) I still take out the manual (well, I look at it on my phone) and follow it whenever I use it. Takes about 2 minutes start to finish.

I love mine but it’s not the one they recommended. Everyone I know brings their knives to me to sharpen and it works really well but we also don’t use Japanese knives.

Buy a double sided whetstone on Amazon for 10 dollars and do it yourself. Use an old leather belt for stropping once you're done. It's a very fun and useful skill and you don't have to have another stupid appliance sitting in the deepest recesses of your kitchen.

I use a $10 Furi Ozitech Diamond Fingers. 30 seconds, a dozen swipes, and it knocks those tomatoes right out, the question about these reviews should be what the home cook can really benefit from, not chefs and food nerds, who already know what they need.

This discussion of edge angle is misleading (esp. that graphic). Sharpening two bevels at 15 degrees produces a total angle of 30 degrees. The edges you are comparing are actually 30 and 40 degrees. And just be aware that a finer edge is less durable. It's the old performance/longevity tradeoff.

Nelumbo Nucifera yes and no, this is just how knife sharpening angles are talked about here the food network the knife-making industry stores it's because when you hand sharpen a knife you do it one side at a time so the 15° or 20° is the angle you hold the knife off parallel to the sharpening surface and while they don't say it in THIS video, the graphic reflects this as the pictures show 30° and 40° respectively

Yes that is the former model which does a 20 degree bevel. I think one of these will do both.

European-knifes used to be slimmer (carbonsteel-time) and became thicker in the last 30-40 years for warranty reasons

15 degree sharpening angle means the grinding angle on only one side of the knife. The combined angle of the blade should be 30 degree. If you want a knife with a combined angle of 15 then you would need a sharpening angle of 7.5 degrees.

Ok. One question. I know that steel rods won't sharpen knives and that you should use them to "maintain" the edge. However, if I were to buy only one thing, for instance the manual sharpener in this video, if I give the knife a sharpening every time I use it, will I wear out the blade? Basically, do I need a steel rod even with such a sharpener? Thanks all! (I have the Victorinox Fibrox 8-inch if that makes any difference)

+Northern Canuck Not really, but who wants to break out the machine for just honing the edge? One should use the steel just for a couple of strokes once a day, depending on how much use, for best results and safe, easy cutting. The machine can be used on stages 2 & 3 about once a month or so. Save stage 1 on the machine for when you have damage to your blade.

My Chef'sChoice CC120, has arrived. So now I have the Chef'sChoice CC120, which is basically the same as your winner. It takes a lot of metal off for medium sharpness. It's perfect for the housewife / househusband without manual sharpening skills. To claim the resharpened blade won, is a nonsensical statement. It depends - for starters - on how the knife comes from the factory. It's brand-dependent! The Wüsthof's I have come dangerously sharp, but the Zwilling & Henkels come out poorly sharpness-wise. So winning from a Zwilling or possibly a Victorynox like you showed, doesn't mean much.

Probably, although I suppose it depends how old you’re talking. 15 degrees per side isn’t actually that extreme and if you’re unhappy with your cutting performance it’s probably worth a try.

I love it when you try and prove visually that a knife is dull by pressing down hard on the tomato. And then when you prove it is sharp you meticulously slice back and forth. FRAUD!
