As a professional pastry chef I loved her straight to the point and clear demonstration video. Just want to add one more thing here, if you can try to get the kitchenaid mixer with brushless DC motor, brushed motor wear out a lot quicker at least in the commercial kitchen.

KitchenAid says the 7 quart Pro Line mixer (the one that's in this video) and their 8 quart Commercial mixer both use the same 1.3 HP DC motor. The difference is the Commerclal one is NSF certified, with stainless steel attachments. It has a two year warranty. The 7 quart Pro Line has coated attachments (but the stainless steel ones can be purchased separately), and it has a 5 year warranty. But, they are both the same machine, apart from that.

Plus KitchenAid hasn't changed the size of the hole for attachments (like the meat grinder and so forth) since they first were made in the 1930s! Which means you can find used attachments (often metal instead of plastic) and they work just fine. Very cool.

I did see another video and the mixer was a kitchen aid but not a “known” model. The mixer was just like the artisan but didn’t say artisan or classic or any indication. When tested it had a lot of play in the head and was bouncing around and wobbly without even adding anything but some water to the bowl. Turns out it has no spring on the stem where the beaters are attached. Kitchen aid then responded that no mixer made after 2015 has a spring anymore. No explanation other than that. So is this the beginning of corner cutting till no one wants kitchen aid anymore? I have a very old classic and noticed that large pin on either side of the base is sticking out a lot, but still works well. I was considering a new kitchen aid really because I do enjoy baking but this one is really old and knowing how everything gets cheapened I guess I will consider myself lucky I saw the reviews before spending big dollars on a much decreased quality product.

FYI, the Kitchenaid Bowl Lift mixers have a screw adjustment that lets you slightly raise or lower the bowl so that the whisk touches the bowl properly. So a fine adjustment could make a big difference in how well it mixes.

@@willfishing5605 WHY did you have to say that when I was perfectly satisfied with the comment about torque?!?!? 😱 Now I have to go and look it up and make sure that I understand the meaning properly because after reading your post I'm now thinking about vehicle engines and transmissions, not kitchen appliances. I don't think stand mixers come with clutch pedals or turbo 🤔 EDIT: I looked it up and determined that this video mentioning torque in a mixer is ABSOLUTELY nonsense. The term would definitely be appropriate when you're talking about a vehicle to supply the force to push the wheels COMBINED with horsies but not with a freaking home cook mixer! It only goes to prove my theory that ATK promotes the products that companies donate to use on their TV shows (sponsors). We need to simply use them as one of many resources and NOT the God of Advisement.

After 3 Kitchen Aid mixers, I have finally moved up to the 7qt Proline and it is totally worth the money. It is a power monster. I make a lot of pizza dough in rather large batches. I also have the 7qt Kitchen Aid paddle with the built-in scraper and that works pretty well though i always check the bottom at the end to make sure It appeared to me that you were kneading the doing too fast. The suggested speed is only 2 out of 10 for Kitchen Aid.

Eric Goz Please take what I’m about to say as some friendly advice and really be open to it. Now, while I’m sure your intentions were good, an appliance is a terrible gift to give your wife-especially an appliance like this, which helps her create things for you! Honestly, unless you put a diamond ring in the mixer bowl when you gave it to her, it really comes across as a self-serving gift - really caveman-like. Other terrible gifts include: toasters, toaster ovens, blenders, waffle makers, vacuum cleaners, washers and dryers, irons, refrigerators, dishwashers, ranges, microwaves,...Pelotons..., etc., etc. It is a great mixer, though. :)

Very happy with my Cuisinart. I bake multigrain bread, white bread, pizza dough, muffins and it doesn't miss a beat. Some of my bread doughs are thick and heavy but I let it rip and soon the dough is climbing up the dough hook and ready to rise. I guess it is pretty similar to the KitchenAid. I usually have to use a spatula to scrape down the sides of the bowl a few times. A dough hook needs a little help early on. Nice to see all the brands I luckily avoided.

if you'll be doing small batch baking (not double or triple batches at once), the artisan would be ok; i find it annoying that the head lifts back. both of my mixers are the pro line 6 qt kitchen aids - i've had them for over 8 years too! for the amount of $ that mixers go for now, i would go with the recommended one (pro line 7 qt), but i know it's also not cheap. it will last for years and years though.

I can't imagine using a different brand! I have 2 pink ones that were given to me by my (ex) husband after I was in a horrific car accident. I too had to rebuild my 7qt pro. I have a 33 year old 4.5 qt version that works great but the newer larger one can't keep up. I am disappointed that KitchenAid has gone lost it's commitment to quality that it used to be known for. And when I called KitchenAid customer service they were unfazed that a 3yr old mixer (that is used sparingly) needs to be rebuilt already. Seems that that is acceptable and expected of them. Another old standard falls to the wayside. I will not ever buy a new KitchedAid but I do keep an eye out at estate sales and on line for the older ones.

The issue is in the gears and lube. IF you notice the end of the mixer head above the bowl is getting hotter with each use, you have a lube breakdown. That is the only way to tell. The grease and seals were changed when they went to plastic gears with a result the the grease gradually leaks and you loose lubrication. The Feds also changed the standards for food grade grease which is also a core issue around 2005-8. The plastic gears have a very long life with proper lube, but that is the issue since the seals have a harder time containing it and the grease lubrication characteristics also break down with heat generated mixing. If you want a Kitchen Aid to last, you have to lube the gears at require intervals. When you remove the top of the gear housing and look at the grease. If it is still white, simply add more. If the grease is bad it will be darkened from burning. The old grease Kitchen Aid used to use was a black grease that is no longer permitted. The old grease could last 20 years, but the new does not. There is no real way to tell if the grease has lost its lube and is bad other than more heat generated. Remove and clean the housing and gears and put in new white food grade grease. If you see serious wear on the gears, I would go ahead and replace them. They are not expensive. I bought a Pro Kitchen Aid in the early 90's and it ran until 2017 when the gears tore apart. I paid around $30 for parts and another $25 for grease adn rebuilt it in two hours. I had noticed for a while the housing was getting hotter. When I opened it up there was virtually no grease left.

I've done a lot of mixing, kneading and whipping with it and it is still running, just as good as new. I am only now; getting ready to oil it for the first time. Of course, when I bought that particular model; it had been discontinued as a home mixer by KA. I guess I was lucky, because that was the last one I found. To think; I almost didn't buy it. It’s so good, it prompted me to gift my old Kitchenaid (Artisan) to my brother. He was happy, but I don’t miss it. While I loved the Kitchenaid and still prefer some things about it, primarily the whisk, the Bosch is so well designed. The Bosch in this video does everything better than any Kitchenaid. I can make 14lbs of pizza dough in mine easy. KA was high end many decades ago. @Bigheadedwon
@Bigheadedwon Год назад
@@svn5994 Wrong, the internals are infinitely better quality, it has suction cups because it's so powerful and the motor's bottom mounted so it has so much more torque also. The motor's well over twice as powerful as a Kitchenaid. I've owned both, it's not even debatable how much better and more powerful the Bosch is. I make dough weekly in my Bosch, the amount I make in 1 batch would need to be broken up into 2 in a Kitchenaid. And I would end up burning the low quality motor out, or break the cheap plastic gears within 6 months of weekly use like I do now. Also, in a KA I end up needing to hand-knead the dough more after it comes out because it does a terrible job at kneading. Where in my Bosch the dough comes out perfect. My KA died from this very dough, my Bosch will probably still be working in 20 years, with me using it weekly. And James Beard, one of the most famous chefs of all time swore by the Bosch units. And he knew just a little bit more what he was talking about than you.

@@robinbanks3216 I’d still take a Bosch Universal Plus or Ankarsrum. the Proline will be higher quality, but KAs do a poor job of kneading dough compared to an Ankarsrum. Every time I make my pizza dough in a KA I still end up having to kneed it by hand for a few minutes. KA will be much better for small batches. But if you’re using it to its max the KA will lag. The artisan line makes sense because you can buy them at a Target and they’re not that expensive. For the price the only reason to buy the Proline would be brand loyalty. If you make a lot of dough and bread the Ankarsrum’s near impossible to beat.

I am confused that they didn't mention the Bosch Universal Plus. I see it in the video clips. Makes me wonder why. I will say that I have had a Bosch for seven years and I bake whole wheat bread and it works just like a dream. I can knead nine big loaves of whole wheat bread and it just does it without any issues or complaint. It has a very powerful motor and transmission which shifts down when the load is heavy, it is well designed, there is no dump mixer head to get in the way of adding ingredients. So if any of you are wondering about the Bosch I highly recommend it.

"I am confused that they didn't mention the Bosch Universal Plus." These free videos on RU-vid just have the highlights. For the full reviews you need to subscribe to their site. Here's what they said about the Bosch Universal Plus: "Shaped like a tube pan and with the motor beneath (rather than above) the mixing action, this model whipped and creamed quickly, except with small quantities of ingredients in the bowl. Kneading was its downfall: For single batches of dough, the flour never made contact with the dough hook."

I grew up with the old-style Bosch Universal. The motor was beside the bowl, and turned a LARGE gear, under the bowl. (This is all covered, and you can't see any of it.) We had the small plastic bowl, and a LARGE stainless steel bowl. Mom never knew how it would work for small amounts. (I was the second of seven kids.) It could knead up 6 or 8 loaves of bread, at a time, and 4 or 5 dozen cookies worth of dough. Whipping a cup of cream? Don't know. Beating 2 eggs? Yeah RIGHT! steve

what the review fails to mention is all the plastic/non-plastic gears that fail/break on many of the kitchenaids after a few months of use. i havent read one complaint about the bosch failing after years of use. please dont take my word for it. there's plenty of complaints on consumer reports, amazon, etc.

@@BobRooney290 I had a Bosch Universal Mixer back in the mid-nineties and twice stripped the large nylon/plastic gear in the base while kneading whole wheat bread dough. The dough was somewhat heavy relative to typical commercial loaves. For four loaves it took 14 cups of flour split between whole wheat and white. I rarely could mix more than 10 of those cups of flour if I did a 50/50 mix between wheat/white. I gave up and went back to kneading by hand.

Anne Castle, you should replace the grease. It’s easy and you can get the food grade grease on Amazon. I’m sure your metal gears are wearing down from metal on metal grinding. Open up your mixer and just take a look to see if you still have grease which should be about 4 ox packed all over the gears. “KitchenAid mixers require periodic regreasing to ensure proper performance and minimize wear-and-tear on the gear system. When the grease wears down, it can leak out of the machine and result in damage to the gears.”

One mixer was missing, the Swedish Electrolux Assistant. My first Kitchenade was purchased circa 1975 and it was used in commercial kitchens and at home. It lasted until 2004. The 2nd Kitchenade was a Professional 600 model. It was used exclusively in home. 2008 the planetary gears went out. Had it fixed and that was expensive. Last month the planetary gears broke again. The mixer was used to make sourdough bread, pasta dough and pasta prepared using the pasta attachments. Not having the mixer made me make sourdough by hand. I'd forgotten how rewarding it was to hand knead bread dough. And that batch of read was one of the best that I'd made in years. The same making pasta dough. Forming the flour into a 'fontana', breaking the eggs into the fontana, pinch of salt, a little EVO, and working the eggs into the flour. Then I got my old manual pasta machine that I'd lugged home from Italy and hand cranked the dough to make linguini. Again the best batch in years.

carpii It’s about the motor and the gear box Tilt head + 5-6 quart bowl lift have ac and a worm gear box, weaker and noisier. But cheaper and better for small tasks Bowl lift + professional 6500 have dc motor and metal reduction box that are quieter and stronger. More expensive and more for the everyday baker. Something to note is the burning smell, that’s from the grease setting into the gears. If there’s any leaky grease it’s probably because of excess heat or when you don’t use it for a while. Still food safe, too much grease and you should get it fixed.

Yeah I too wonder why they left out the Ankarsrum. At first I thought it was cause it was in a different league, costing way too much compared to the others, but then I heard her say the most expensive they tested was $850 and the Ankarsrum's $800 (used to be $700). The Ankarsrum out-performs all the others in terms of quality (including where it's built, which is Sweden), power and torque, stability, capacity (20 cups), quietness, space (fits under upper cabinets), true versatility and warranty. The only negatives besides the price: there's a learning curve since it works dramatically differently than these planetary ones (e.g. bowl spins with unique roller and bowl scraper action); and while the main stainless bowl can handle multiple types of foods and liquids - there is a separate bowl with whisks and paddles meant for things like whipped cream, eggs and light batters primarily. But that bowl also acts as a storage "container" for such accessories. By "true" versatility I mean that no kitchen aid - modern or otherwise - can handle mixing and kneading multiple loaves of heavy whole-grain breads or heavy cookie doughs. The Ankarsrum can mix/knead 8 loaves with no strain whatsoever. I highly doubt these folks weren't aware of this mixer - even if mainstream America isn't - which makes me question everything else they've said, unfortunately! Otherwise, that woman there seems very sensible.

Great feedback. Testers/reviewers leave out many products often to save time and also because a lot of manufacturers do not wish to co-operate. Sometimes manufacturers want to set additional rules which isn't in the best interest of reviewers. Somebody pays these people, so independent reviewers don't really exist. They all abide by company rules, or rules set by their sponsors. As it comes to these specific testers, they left out another 10 potential brands at least. And then two out of two 'favorite' winning products happen to be of the same brand... I wouldn't take any reviews all too seriously. But it's interesting to watch it now and then for some inspiration and own learning curve before buying.

So Kitchenaid is still the best, never a doubt in my mind. Me and my grandfather used to make countless batched of our pumpkin rolls for both us and to sell and you have to make the batter and filling separate. We just used cheap hand mixers and they could never keep up ti needing to mix and whip the batter and cream the sugar and cold chream cheese together, they would burn out within weeks. That was until my grandfather bit the bullet and bought a Kitchenaid. Never once faulted, and better pumpkin rolls than ever! Ive had my Kitchenaid classic stand mixer for years now, got one as a christmas/birthday gift, and have done countless batches of bread and cookie dough and more, all without fail. In fact, I loved mine so much i started getting the attachments and even bought the simple 5 speed hand mixer for smaller jobs. Kitchenaid also just released a "mini" version of the stand mixer that has the same amount of power as the Classic! I don't think i would ever switch, they are just too reliable for me to think otherwise. Sure there heavy. But think of a Kirby vacuum, it heavy too, but you know what? It will probably outlast me!

I burned through 4 Kitchen Aid's this summer making 50% moisture bread dough. After a month of use, each one, some sooner, broke down, got too hot on one batch of 2lbs of flour. Even tried the new 8 Quart Professional model and that didn't last a week. Not to mention bouncing all over the counter. And none of them can handle a double batch of dough. For my kitchen in the country, where I have more headroom, I got the 12 quart BakeMax which powers through a double batch (4lbs) of artisan bread dough. I've only had it for two weeks, but it is incredible, but much more expensive at $1625. But its 28" tall! I think my next mixer with a smaller profile, but incredibly powerful will be the Haussler Alfa Mixer. Going to take it for a test run soon! It is like a home version of a professional Spiral Mixer, which is different than a planetary mixer. Instead of gears, it has ball bearings and a chain apparently. The bowl turns in one direction and the spiral dough hook in the opposite direction. It looks incredible. Only drawback I've seen thus far is that the dough can sneak up the hook, but I think that is for very wet dough and maybe too large a batch. I also own an old Bosch which is very powerful, but sometimes the ingredients don't mix properly and often spin around the bowl without getting incorporated, the center post is annoying and you have to do a lot of scraping down the sides. I saw a video though of a dough divider/and dough guards you can add to the Bosch, which might solve a few of these problems. We shall see. I'm dreading going back to the city to my 6 quart fairly new Kitchen Aid. I think I will keep that just for cakes and whipping.

Well if they showed the Kenwood here the kitchenaid would not look good. And that’s not what they get paid for 🤭

@@muthumukesh7872 I don't think Kenwood machines were available in the US until recently, and even then, what's the point of advising people to purchase a hard to find machine?. Kenwood machines also have several features that ATK advised against, such as the handles, splash guard and V style bowl, as well as a much higher price. Kitchen Aid mixers are the gold standard in the US, and make excellent mixers for reasonable prices.

If it helps any, I can highly recommend the Kitchenaid Classic Plus. I'm still using my Grandma Ida's stand mixer that's got to be no less than 30 years old as my Grandma Ida died in the early 2000s and I know she used that a long time before that. Long story short, if it ain't broke, don't fix it. I've used the whisk, dough hook, and paddle, as well as the grinder feature to make ground beef and ground chicken mixed with other ingredients. Never a failure.

I've been considering getting a Kitchenaid mixer, but was concerned that the more affordable Classic wouldn't be able to stand up to pizza dough, and thicker cookie doughs. My wife has a family cookie recipe that she's never been able to mix by herself because you need to keep adding flour until the dough balls up and wont stick to the bowl. I've always had to mix in the last cup or two for her. That could be a thing of the past now. Thanks for the video.

@@janpas5887thank you for your input. 🙂 I did end up getting the 6 quart pro and while it works great for bread dough, I still wish I could afford the 700. I started making bagels recently and the 600 just can't handle that super stiff dough so I end up having to do most of the kneading by hand. Very difficult for me due to physical limitations. But overall I'm happy with her. She's red and her name is Ruby. She's a little noisy but she's been a huge help with my family's breads so I don't mind.

My 2009 vintage heavy-duty stand mixer permanently occupies a convenient spot on my kitchen counter, and I still can't imagine using it for such a trivial task as whipping one egg white. That's what my 1984 vintage hand mixer is for. Hell, even that small amount of clean-up is too much; I'd probably use my 1978 vintage hand whisk. As for a single recipe of pizza dough - which isn't a sufficient quantity for my food processor, either - once again I wouldn't use the stand mixer for something so small. That's what my 1959 vintage hands are for.

All too true. I use my boat motor and wisk attachmet that makes meringue like nobodys buisness. Who would want to dirty a stand mixer for tiny tasks like this? ATK really makes me wonder since the new board of Directors came into power.

I feel so old, if 2009 is vintage. My electric hand mixer from 1980 is still in use, almost weekly. But I splurged on my first Kitchenaid Stand mixer in 2008. I still think of it as my “new” mixer.
@agcons

@@Jasminebed2 In this case, I'm using "vintage" to mean "from that year". Although my 1978 hand whisk is probably old enough to be considered "vintage". My hands certainly are. :D

My mom bought me a Kitchen Aid mixer when I turned 30. I’m now 50 and it’s still going strong. She paid about $300 for it 20 years ago so I guess it was a pretty top model back then. I’m not big on heavy dough kneading but I’m big on cookies and cakes.

Here's what you might not realize with the winner: It's tough to get the bowl off of the mixer w/o taking off the mixing attachment; the bowl doesn't shift downwards enough. With the "tilt head" you can get the bowl off the mixer w/o taking off the attachment.

I appreciate the efforts made here to compare and contrast some of the well-known manufacturers, both from a quality standpoint and price. I think the smaller Kitchen Aid model that came in second in your review will suit my needs. Taking advantage of the Black Friday sales now will assure that you get a good deal. Thanks for your excellent analysis.

What you good people don't know, or don't realize, is that Kitchen Aid silently backed the sponsoring of this video. So...if it seems one-sided, then it is one-sided with Kitchen Aid winning their own contest. Folks...if you're still in doubt please skip straight to the 5:32 minute mark and pay close attention from there. The smaller KA stand mixer BROKE (which should be an automatic disqaulifier) and the KA Pro 700 was placed up against another stand mixer to keep it from walking off of the counter! Just watch the video and you'll see for yourselves! There are some very good stand mixers out there and even a couple on this video that are completely shut out for very minor inconveniences by this Kitchen Aid spokesperson.

This folks is why the Internet is such a poisonous place. Personally I trust the ATK folks to have integrity in their reviews. They are thurough and have never given me reason to distrust them. However there are always disturbed people like "mtpinky007" here who feel the anonymity of the Internet gives them license to simply make up stories to slander people or entities simply to further their poisonous mindsets. The 700 never looked like it was going to "walk" off the counter. All of the mixers were close to each other and it could be argued any of them could have "walked" off the counter. The idea that they were doing this to make it look better is pretty ridiculous. All you need to do is look at the video to see how much better the Pro Line mixer performed than the others to see that your comments are bullshit. On top of that they clearly call out the smaller mixer for going out of alignment during the face off torture test which was done intentionally. The Pro Line handled it with ease. So take your hate back to whatever news site or conspiracy forums you frequent and leave the adults here to discuss things intelligently amongst themselves.

@@beckiwildeman600 At 5:11 you can also clearly see that they had placed the unit at the very edge of the counter. What do you think they would do let it risk falling off? The other mixers are not at the edge. This wasn't some kind of planned biased protection of the unit it was something any sensible person would do if you put a running mixer at the edge of a slick counter....you'd push it back in to make sure it doesn't fall. You people just boggle the mind.

I see a lot of people here who have had issues with their KA stand mixers... I can't say I have had the same experience. After I graduated from culinary school in 2001 I received a KA 5qt pro stand mixer as a graduation gift from my family. I used that thing constantly and it never gave me a single moment of trouble. In 2007 I upgraded to a 7qt. and gifted my old mixer to a family member. Both machines are going strong still and have taken a fair share of abuse, including making bread, pasta, wedding cakes, the works... I don't know if the quality has deteriorated in the 11 years since I bought my last mixer, but I can't imagine ever switching to another brand.

I like the recap here but wish the comparison included some of the world’s favorite mixer brands. I have seen vloggers’ reviews typically of 1 or 2 mixers covering top ranked and currently popular stand mixers including brands like Bosch, Kenwood, and Ankarsrum. What I was hoping for here was a totally rigorous comparison of a healthy variety of mixers. They have the facility, resources, know-how and investigative mind set to do it! I’m disappointed that Bosch, Kenwood, Ankarsrum didn’t seem to be included this time around.

There is a reason it's called 'America's test kitchen' ;-) - I'm a little late commenting, but all the same: I have a HD Kitchenaid, a Thermomix (actually 2, the TM5 and the TM6), a Kenwood, the Bosch MUM (the biggest one, don't remember what it's called) and an Ankarsrum. The Thermomix is in a league of its own and not comparable to the others. If you make a lot of bread and dough that needs to be kneaded, the Ankarsrum is a good choice, but it's a little trickier to use. The Bosch is a beast, but heavy (I have the stainless steel one - no handles on the bowl is what annoys me most). The Kenwood and I never became friends, I just don't like it which is why I just sold it (it tries to be a Thermomix and a Kitchenaid at once and fails IMO). If you bake a lot in larger quantities, but want to use tools to cut etc. at the same time, the Kitchenaid is definitely the most practical one and the best choice.
