Ermine Frosting | Not Sweet Buttercream | Flour Buttercream
Today I am sharing our Not-Sweet Buttercream (aka. Flour/Ermine Buttercream) This delicious flour buttercream is silky smooth, light and fluffy, making it the perfect buttercream to pair with a sweet cake.
Quite often Buttercream can be so overpowering with that "sharp" sweetness from all that icing sugar. It is still possible to get the fuffy silky texture without all that sugar. This buttercream compliments a sweet cake exceptionally well creating a well-balanced cake.
To make this delicious buttercream, you need just 4 ingredients: butter, flour, sugar, milk!

LETS MAKE IT! 😍
INGREDIENTS: (you can half this recipe if you do not need as much buttercream)
Half cup - all-purpose flour
2 cups - granulated sugar
2 cups whole milk
500gms butter, softened at room temperature
INSTRUCTIONS
1. Combine flour, sugar, milk in a saucepan. Whisk until combined.
2. Place saucepan over low heat and allow the mixture to come to a boil, mixing continuously. Once the mixture starts to bubble, remove from heat and scrape the pudding onto a clean dish and immediately cover it with plastic wrap, pressing the plastic wrap directly onto the pudding to keep a skin from forming. Allow to cool to room temperature.
4. Once the pudding has cooled, beat the butter in a medium-sized bowl until smooth and fluffy and lightened in colour, 5-9 minutes.
5. Add the cool pudding one tablespoon at a time, mixing well after each addition. Once all the pudding has been added, mix for another few minutes, until the buttercream looks fluffy and silky.

This is the original buttercream!! Lol, but seriously this is from way back to our mothers and grandmothers. I know my grams made her cakes with frosting just like this, with cooked flour and milk

Yes you can! This actually stabilized unlike whipped cream. This is my go to recipe for a non sweet cake topping.

Hi! Can you respond ASAP? I really want to make this frosting but I am unclear on how much milk I am supposed to use. It says 1 cup in the description but in the video it says 2 cups?

The recipe was incorrect in description. Use the recipe below: Half cup - all-purpose flour 2 cups - granulated sugar 2 cups whole milk 500gms butter, softened at room temperature

I would use corn starch to make the roux. Because flour has a floury after taste. Corn starch will give much smoother mouth feel compared to ordinary flour.

The flour is cooked,so there really was no aftertaste in my opinion. It was silky smooth,I just thought it was too rich-I guess I don’t care for all that butter. That’s just my taste,however. I may try it again with vegetable shortening,or maybe half and half and see how that works

I've done this. Texture is runny. I would beat cream cheese separately and fold into frosting after frosting is done. Might yield better results.

The frosting generally holds well however, like most frostings its best not to stay at room temperature for too long

I have not personally tired this, but powdered sugar has thickening agents in it, so I doubt you would get the same results.

@@tastefullyshay HI thanks for answer me. i use room temp butter and room temp pudding don´t know what happen never works always when i add the pudding turn out melted and when i traid to rewipped i put it in the frigde and them rewisk again but in less than half an hour the cake is melted again i´m so sad about this because its not enought information about this please help

Hey. Hope im not too late. Here try this. This is flour,sugar,milk,butter,water. Very stable and not too sweet as American buttercream. ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-SmEQwDv8n64.html. The swiss meringue butter cream from preppy kitchen (youtube channel) is also not too sweet and very stable. Hope this helps

I quartered the recipe. I don’t know if that might have affected the final outcome,but I wasnt crazy about it-too rich. All that butter kinda made my tummy unhappy-sorry.
