I think most people would disagree and say whiskey does air out or oxidize.

You are correct that many people would say it oxidizes but that does not make it true. There are many things that are passed down in this hobby that arent actually based on science. Chemically it is absolutely not oxidizing, but rather abv is slowly evaporating and the solids in the liquid are concentrating but that process takes much longer than you realize. No one in the industry who actually works with the liquid believes in the neck pour and in fact Brent Elliot of Four Roses laughs at this notion that your spirits change after opening in the short term. The science simply does not support it and if you do a truly blind tasting, the phenomenon disappears. Which means its in your head.
