This journey is very easy to plan requiring only 1 change at Brussels Midi/Zuid to catch a connecting train to London. Purchasing the tickets via Eurostar website allows you to add on connecting travel to any Belgian rail station to your Eurostar ticket, making this a very convenient option. When you print your tickets at London St Pancras you will be given extra vouchers for the Belgian train travel
I completed the journey as a day trip you may well want to extend this to a weekend, Bruges is a beautiful city with a lot to see and do. However as a day trip if you take the first train out and last train back you have several hours to enjoy Bruges and I also had 2 hours in Brussels between trains to visit the Grand Place.
