This video contains every Easter Egg in Toy Story 2, including about two dozen that I don't think anyone has ever found before.
I went frame-by-frame through the film and spent a lot of time googling and trying to find people's birthdays. Hopefully not in a creepy way.

I define an Easter Egg as: a hidden reference to the film’s creators, whether that’s the individuals who worked on the film or the company as a whole (in this case, Disney and Pixar).
If you think you’ve found an Easter Egg that I missed…well, you’re wrong. Reread the video’s title. I didn't include general film references (like the Jurassic Park tribute with Rex in the mirror) or general trivia (did you know that stores really DID underestimate the demand for Toy Story toys?).
Having said that, if you really truly duly think you’ve found an Easter Egg I’ve missed, let me know in the comments. Here’s some that are frequently listed around the internet that I deliberately didn’t include:
-The film also includes a LOT of Star Wars references, to the point where you could make a whole video about that, but they're not quite Egg-y enough for me so I didn't include them.
-I could have included the feather-fall as a Forrest Gump reference but, uh, I forgot to until writing this up.
-The Pizza Planet truck isn't counted as an Easter Egg in this film; it's a direct sequel to the first appearance of the truck, so it's just part of the universe. Similarly, y'know, Woody appearing isn't an Easter Egg.
