I don't know if you're aware of this but the variants on the tracks occur randomly. The devs currently don't know of a way to select them manually or if it's even possible to do so. There's still the original version of Yoshi Falls, for example.

I can usually get the variants by pushing L, R, or Z(on GameCube controller) before pushing ok. I don't think it's guaranteed, but that's my theory... MY GAME THEORY

They probably didn't bring back Figure 8 Circuit in MK8 because one of the new tracks is pretty much already just that.

The only way is to top Mario Kart 8 Deluxe is to have a game with every track, character, battle track, mode, and a double dash mode.
