They're probably meant more for legal protection. While the venue might not actively try to stop people, the message is that the venue isn't promoting moshing. Thus, anyone who gets hurt moshing can't sue the venue for letting it happen, because the venue established that there wasn't supposed to be moshing.

Funny, the ETID shows I've been to aren't that raucous. I'm conflicted, it's fun to mosh but I don't need a broken neck?

Yeah I don't know, last time I saw them at the Opera House in Toronto Jordan jumped from the speaker stack onto the crowd mid show. But hey, I'm sure you've been to ETID shows
