Writing this in the comments because people keep asking. The main theme is Il Vento D’oro, the variant one is from the track Incursione, and the final one at the end is Fine Della Vento Aureo.
I'm almost 99% sure this song what made specificaly with that scene in mind. It just fits perfectly. You can tell that "Stardust Crusaders" was composed with the Steely Dan beatdown in mind,and "Diamond is Unbreakable" with the "I already healed you" scene in mind,so this has to be it for Il Vento D'Oro
Because it isn't his theme. But it's the moment he's winning over abbacchio, the start of the gangs arc, him inspiring them and leading them. Which is also why it plays so much for the mista and giorno vs white album fight. So the gangs theme plays.

Polpo had the 24 hour lighter test, then Giorno joined in at around noon, Bucciarati killed Pesci at dusk and then rebelled at dawn the next day, fight with Green day happened that night, and Giorno got the arrow in the morning. At least that's what I figured out for the timeline. There might have been a time gap between fights, but I highly doubt it.

When you hear jotaro's theme and he's not even the main character you know you are fucked The same applies for Giorno's theme. If you hear it you won't be seeing anything from your eyes anymore

One of the things I love about jojo is that, more often then not, it isn't the strongest or most powerful fighter who wins, or, at least, that isn't _why_ they win. Fights are won by being clever, inventive, thinking your way out. Especially with the bullshit stands can get up to, there have been some pretty out there stands and powers
Its spice girl, they put spice lady to avoid getting sued. They were sued once in the past by using gold experience as a stand name. It was a prince album if im not wrong

I love that this theme represents what Giorno as a character represents which is Growth, overcoming hardships to gain the upperhand and become better than you were before, and Giorno as a character turns not only himself but the whole gang's the best version of themselves Hence this is a general theme for when characters reveal they're one step ahead
The best part ab this scene is that in the manga, giorno punching this guy lasts for 7 manga pages straight. In case you’re not a manga reader, manga chapters for Jojos usually last 20 pages and if the manga artist wants to put emphasis on a scene, they usually use 2 pages max, but using 7 pages purely showing giorno punching the living shit out of the enemy was amazing

It's not Bruno's gang's theme. That would be Squadra, which just so happens to be the same music that played in the teaser trailer for this part. In typically Yugo Kanno tradition, the main theme of a part is also the protagonist's theme (which makes sense, given that with every new part, there is also a new JoJo), and its many variations across the show are heard wherever the music's arrangers thought it would sound coolest.
Man the animation in this show is incredible, the "camerawork" when pesci tries to save prosciutto is something even a lot of live-action material would have trouble replicating

Part 5's fight scenes are freaking incredible. It's like Part 2's craziness in one-after-another brain-bending chess but with the epicness of Giorno's theme. Freakin' love it.
