Expensive IGP Vinegar vs. Very Expensive DOP Vinegar 

Every wonder if that super expensive bottle of balsamic vinegar is worth the cost? I give it a taste test and give you my honest opinon. Short answer is in my opinion, it is not worth the 10x cost. The more expensive vinegar tastes great and does taste better being thicker, less sweet, but a distinct wine and grape flavor not present in the less expensive vinegar. It isn't something I would long to have but I can see some people acquiring an expensive preference for this fine taste.
Comparing to say Iberico de bellota ham, it has a extreme savory and nutty flavor that absolutely stands out and has very clear taste differences. This vinegar taste difference is too subtle and not significant enough to justify the cost.
