Hi Steve, I was watching another baking channel (No BS Baking) l where he was giving the pros and cons of different oven types, which was quite interesting. In the conversation we had in the comments, it became obvious that there are many types of ovens, largely depending on where in the world you live. Some only have base heating, some top and bottom, some convection etc. Mine has modes that I've never even used! However most YT tutorials neglect to tell the viewer what type of oven they used, although some say 'convection' many do not specify. After making your malt bread recipe and going by your temperature and times, my loaf (thankfully only one) was well and truly over-baked. I came to the conclusion this is most likely because I am using a different type of oven than that which you use. Mine was using heat above and below, is yours bottom heat only? The baking time of my oven usually pretty much corresponds to any recipe I use that is designed for home bakers but there was a difference of around 50% needed in this case! I'm an experienced baker and had doubts about the bake time even before putting it in the oven (should have listened to my head! ) but I'm always willing to at least give original instructions one go and you had said the temp and time in the video as well as in the written recipe. Not a problem, I was prepared for it to fail, I'm just curios about your oven type.

It's funny about ovens so many different types. Like you said, I have been thinking about doing video, Questions about ovens, but I started some time ago and just left it as just couldn't get my head round so many different types, even my 10 ovens I have it was just impossible to do that video, because you will always have someone who has a different one to you 🤣 my bakery ovens are about 80 years old and it's myself that know what to do as hot spots are in all ovens, and up and low temperature, at home is the same thing 2 ovens are not the same both have mines of there own 😀 as a Baker recipes and time are guides, because things happen each and every day 😀 this is baking in the real world 🌎 like ovens with lots of different modes why put them on ovens them if no one uses them 😀 for non bakers I can understand 😀 I am going to do different shorts video's on this topic 😀 so thanks for reminding me about the oven 😀 laters Steve

@createinspain I have been watching BS Baking today, yes it's not really something I would be interested in it's just someone talking the p... as it suggests BS 🤣

@@crazybaker1 I am fortunate to be experienced enough to sort through the mess of information on line and I watch YT pretty much for entertainment purposes and to get the odd baking idea. He does have the odd video that beginners may find useful, like how to work out how much dough a tin will take. Like ovens, bakers have many different opinions, based on their own experiences and location.

@createinspain that a channel that will just close down over time, it's poor quality information, and coping film is fine but not all the time, but when hills Billys get down to BS it never ends well 😀 it's like short content speeded up with recipe 😀 I have tested this out, I just don't believe that any one could flow a recipe like that 😀 but this is what is interesting about youtube 😀 many people enjoy odd things 😀 currently I am working on my other channel 😀 so lot's of work on there, and in the bakery very busy now, lot's of different things I am working on 😀 laters Steve

The best weight is 2oz each. This is very much the same for most bakery businesses up and down the country

hi steve , i remember years ago some one came in to the bakers wanting crusty rolls and the boss said he didnt do them as the oven wasnt equiped with a steam injector ?

This Recipe makes 14 rolls : 255 grams of water, 6 grams caster sugar 9 grams bread improver 9 grams of salt 22 grams white shortening 23 grams of fresh yeast, Dry yeast 12 grams, quick dry yeast 9 grams or best to check on your yeast as it may vary from what I have 😀 455 grams of best bread Flour
