I always enjoy your videos, Emily. #1 is I am so glad to see you recovering from that concussion. That had to be heartbreaking to deal with for someone like you who enjoys sports and adventure. But, you look amazing and and you were strong to get through it all. The fall foliage was beautiful. I live in the Appalachian Mountains of West Virginia and we're blessed with the beauty as well. Your garden is amazing. The zucchini bread looked delicious and I could almost smell the aroma of the mushrooms cooking in butter, garlic and scallions. Extra nice video Emily ❤ It's good to see that you're doing so much better. I had a severe concussion when I was 18 or 19 and had a really hard time for quite awhile so I know how you feel. Definitely a struggle and not fun at all. Nature has an excellent way of helping you heal and it's nice to see you and your father spending time together. The lake time looks peaceful and it's a good way to relax and have fun. I always enjoy your meals they always look beautiful and nutritious. Your a great cook and food designer. Looks like you're definitely on the right road for recovery. Confidence comes back with time, and there's definitely light at the end of the tunnel you're going through. That vegetable garden has done great for the summer we've had.

That video really connected with me. August was a total washout for me. 3 weeks in the hospital followed by a week in a skilled nursing facility. The end result is that I've been reexamining where my interests lie. I've found that pursuing some older set aside interests has been rewarding while also pursuing some variations of long running current interests. I'm happy with where I'm at mentally.

Activities + brain if you spend time playing tennis or pickle ball with your non dominate hand you will notice your technique of playing tennis in a sort of slow motion way. You will notice small changes that improve your shots over time. These learning points can then be used when you play with your dominant hand. An easy way to start is if you want to play with someone who is new to tennis and it will make you somewhat on equal skill level which will make it more fun for both of you. If you can continue with this it really creates a lot more brain interaction. 😊

I am so happy that you are exploring new activities. When I was a bit older than you, I just decided to learn skills/hobbies that I could do should I ever not be able to walk; then I went after those that I would enjoy should sitting become a problem. It was eye opening and though it was a very long time ago, I never forgot the exercise and continue to develop new skills. I hope you grow in gratitude for even the smallest things and never wait to give Praise and Thanks to God for every feature of life. From mountains and rushing streams, to tiny animals and birds, grasses and trees. Wishing you the very best Emily!

Wow looks like you are getting on much better now. I love the format of your videos and good luck with your trip. With your mushrooms a chef friend friend of mine changed the way I cook mushrooms forever. They said (And I'm not sure if it would work for oyster mushrooms but I don't see why not) Because mushrooms have such a high water content, dry fry them first in the frypan to remove most of the moisture content before you add your oil (I know seems counterproductive) and once they are basically cooked add your butter and garlic for the final browning. I thought I'd try it and haven't added butter at the start since. The flavour was just more intense and I think, better. Good luck with your road trip.
When I was younger I played a lot of tennis along with golf. Never much into jogging. But I tried to stay active throughout the years. Now that I'm in my golden years I still play golf and take my lab on long walks daily. Some bike riding too. I can tell you will always be an active person which will benefit you long term. Plus you're doing a much better job at eating healthy than I have done. I'm working on losing 10 lbs and it's not easy when you have little will power. Ha. Nice video! Keep them coming.
