***WARNING***This video is made for educational purposes only, if you attempt to make this at home you do so at your own risk and we can not be held responsible for any injuries. Making peanut brittle is a dangerous process since such high temperature are used to make it. With that said, for those that are curious and want specifics this is how we make it.
We add 10 pounds of corn syrup in a copper kettle along with 14 pounds of sugar and 2 quarts of water. Bring it to a rapid boil before adding raw peanuts; already cooked peanuts would give it a burnt taste since they would then be cooked for a second time. Once the candy reaches 285°F we remove it from the stove and add an ounce and a half of salt and 8 ounces of baking soda. Then we pour it on the table and flatten it our and wait for it to cool down enough to cut it into thirds and flip it onto our metal counter where we'll stretch it thin. Then we box it up for sale!

I love this video so much, it just warms my heart to see Terry and Steve acting like such a cute married couple and then Craig working with them. My first full time job was at MarySue Candies in Baltimore MD, started there around Easter time, mostly worked peacon table and removing candies (creams) from the ersober. One day a gal and I got to playing around and the candy got away from us, it was like I love Lucy all over. We both got sent home for the day, Mr Spector was super mad because the floor lady had to shut down the line. 50 yrs later and that candy factory is one of my fav memorizes. Thank you.

Ok.. a 5 ml measure if dishsoap, hot water and 20 ml measure of white vinegar! Fantastic glass cleaner! Use white vinegar in washing white items,it brightens them,put it into the rinse instead of fabric softener,you can do extra rinse with fabric softener if you want to. Just couple of tips to go more chem free and save pennies same time! Love from Scotland 🏴󠁧󠁢󠁳󠁣󠁴󠁿

The best ever peanut brittle is “Sees”. They do chocolates too, but their peanut brittle is chewable, unlike other brands that r too hard. Sees puts a lot of butter in theirs too, so it must make it crispier and easier to eat.

+Mark Mc i know they smooth down the foam to create a thinner brittle, but if your at home DO NOT touch it once poured! That foam creates air pockets and is the key to make the most delicate "brittle" thats not hard even your grandma can eat it! The more you "thin" it out the harder it gets because you stop that air bubbles that create that delicate britle we all love. Also, add a little bit of vanilla extract when you add the baking soda, trust me! You can even add a tad bit of butter when you add the raw peanuts if you don't mind the extra fat. Only gives more flavor.The recipe i use is 2 cups sugar, 1 cup corn syrup, and 1/2 cup of warm water to be the best base to start off when at home. When the temp is about 250-270 add 2 cups of raw nuts (whatever you prefer can be cashew , pistachio, etc) and plus 2 tablespoons of unsalted butter. Add as much salt as you like for flavor (southerns even add some Cayenne pepper for a little kick!). Once at 310 remove from heat, add 2 teaspoons of baking soda plus 1 teaspoon vanilla extract and stir till mixed. Pour onto a cookie sheet thats buttered or sprayed and DONT TOUCH IT!

I have seen reciepes that use just sugar and water, but ive found the added corn syrup makes it easier to get the consistency we want.
