I saw this dish 1st time on History Television 18 program 'Top Secret Recipe' presented by Todd Wilbur. Where he attempts to replicate this dish, and I saw the way he was cutting his onions with bare knife :D. It was fun
Excellent recipe. Very tasty. They call it "onion rings" in southern states like Texas, Oklahoma, Louisiana in US. Same exact method minus the spices. Onions in US are very huge compared to the ones shown in the video.
Pakora is anything that is fried after being dipped in besan or any flour, it's closely related to bhajji there is mirchi (chilli) bhajji, aloo (potato) bhajji, anda(egg) bhajji etc...
The center holds the pieces together during frying. If you keep it intact none of the smaller pieces would come out. The center is also very dense and not crispy at all in the inside

Onion rings and blooming onions are all old American cuisine. He just copy pasted it with indian spiced batter. As a food blogger you should know this. Although great to see him getting famous and giving the twist to the mass.

One small and important suggestion to the chef. Instead of tapping on the machine and collecting it on your hand use a tray to collect. Reason is if that machine slips ur hand will be cut. Looks very dangerous
