Peshawari Kheer is a traditional Pakistani dessert known for its rich and creamy texture. Here’s a simple recipe to make it at home:
Ingredients:
1 liter full-fat milk
1/2 cup rice, soaked for 30 minutes
1/2 cup sugar (adjust to taste)
1/4 teaspoon cardamom powder
1/4 cup chopped nuts (almonds, pistachios, and cashews)
2 tablespoons raisins
1 packet sooper biscuits
A few strands of saffron (optional)
2 tablespoons rose water or kewra water
Silver leaf (optional, for garnish)
Instructions:
Prepare the Rice:
Drain the soaked rice and grind it coarsely in a blender along with sooper biscuits. You can also leave it whole if you prefer a more textured Kheer.
Cook the Rice:
In a heavy-bottomed pot, bring the milk to a boil. Reduce the heat to low and add the coarsely ground or whole rice. Stir continuously to prevent the rice from sticking to the bottom.
Simmer:
Let the mixture simmer on low heat until the rice is completely cooked and the milk has thickened. This process will take about 45 minutes to an hour. Stir occasionally to prevent burning.
Add Sugar and Flavorings:
Once the rice is cooked and the milk has thickened, add the sugar and stir until it dissolves completely. Then add the cardamom powder, saffron strands (if using), and half of the chopped nuts. Cook for another 10 minutes, stirring frequently.
Finish:
Turn off the heat and add the rose water or kewra water. Mix well.
Serve:
Pour the kheer into serving bowls and garnish with the remaining chopped nuts, raisins, and silver leaf if desired. Serve warm or chilled.
