INGREDIENTS

• 3-5 Persian cucumbers
• ½ red onion, thinly sliced
• 20 small tomatoes, halved
• ½ cup fresh mint, thinly sliced

Lime Vinaigrette
• juice from 3-4 limes
• ¼ cup extra virgin olive oil
