Frank Chun, food service manager of Lanakila Kitchen, oversees production of some 2,500 meals each day. After a long day of dealing with food - he begins work at 3 a.m. and continues through the midafternoon - Chun, 56, says he isn’t particularly fond of cooking. But there’s one favorite dish he doesn’t mind preparing at home: chicken papaya.
Chun’s version of the classic Filipino dish comprises green onion and “lots of ginger” that go into the pot with green papaya and boneless, skinless chicken thighs.

Chicken Papaya my favorite dish too, I like to add a somewhat ripe papaya too, and a little sugar, adds so much to the flavor, and over a little rice! Ono!

Bone-in is much more flavorful but I guess that's more work along with leaving the skin on during the cooking and then skinning it off which just slides off before making shredded or chunks of chicken for the dish. Cooked skin and bone-in both make it more richer in taste.

this is a philippine recipe. patis makes your soup tasty. chicken with papaya is called " tinola" in filipino

Just add Hawaiian salt or sea salt and little chicken broth optional

No it's not, can add a little more soy sauce, or shoyu, maybe salt to taste, I like to add a little sugar and a papaya that is a little ripe add really good flavor to the broth. 😊😋
