FERMENTED ROOT BEER: How to Make Homemade Soda with a Ginger Bug

Back with another Ginger Bug Recipe, this time the classic Root Beer! I'm taking those iconic root beer flavors and stepping it up with the power of fermentation thanks to the ginger bug. Did someone say "healthy" soda?

RECIPE for 1 Gal (~3.8L):
______________________
GINGER BUG:
250ml (~1 cup) Water
-10g Chopped Ginger
-10g Sugar
Repeat feedings daily until ginger bug begins to foam
______________________
ROOT BEER:
-2 Tbsp (~30ml) Root Beer Concentrate
-Enough water for 1 Gal (~3.8L) Total Volume
1 cup (~200g) Sugar
-30g Ginger
200g Ginger Bug Liquid
______________________
Ferment @ ~69ºF (20.5ºC) for 3-4 days
Bottle & let sit for another 3-4 days
Chill in Fridge

Oooooh I've looked at the extracts but thought I had to wait to have a keg to try making root beer. Another great use of ginger bug! Love things like this to keep some non alcoholic brews around too, something for the non-drinkers, and for the drinkers after 4-5 glasses of the other homebrew ;)

just to let you know "anything" you ferment contains alcohol. less fermentation equals less alcohol more fermentation more alcohol

Will fermentation stop if left more than 3 or 4 days? Can you add sugar to get it going again?

Sorry if this is duplicated! This was a great video for a BruSho newbie! QUESTION: If I bottle this for extended periods of time ( lets say several weeks to a month) with the flip tops, do I need to burp it like with Ginger Beer! I am happy to brew-sit, a little burp goes a long way! I let the air out of my ginger bug beer almost daily. TRUST ME, I have yet to loose any natural carbonation! It's truly amazing. I can't wait to see your other videos, as I love my little bug. It's the gift that truly keeps on giving!!!

Hey! I would say it’s very similar to ginger beer so if you do the burping that is totally fine for this. I will say it will last much longer in fridge and you won’t have to burp as much if you plan to keep it for a long time. But never hurts to burp

Did you read the ingredients in the "root beer" extract? Caramel color, artificial flavor, sulfiting agents, FD&C RED Lake

Looking forward to brewing some root beer! I have had trouble getting my ginger bug to work. It's like it always goes rancid. I have an off topic question though. What music are you using in this video. The surf rock is so cool. Lol

Trent, I just watched the video on How to Make Homemade Soda with a Ginger Bug, the one for Fermented Root Beer., and I plan on trying it in a couple of days. In the video, you showed a fermenting keg. What type of one gallon keg would you recommend, for someone like me who is retired and living solely on a very small monthly social security security check. I had been using jars and bottles, but have ended up with too many bottle bombs and jars breaking.

Can I lower alcohol levels by decreasing quantity of Sugar as I want to keep alcohol levels very not more than 1%.

Great vid Trent, been wanting to give root beer a go for a while, recently made an awesome Ginger beer and It got me thinking About my childhood, grew up around Bundaberg Australia, famous for its Bundy rum and softdrinks, anyway, they used to brew a softdrink called 'horehound', it was the best drink of all time! Unfortunately the horehound plant was declared a noxious weed and about 20 years ago they stopped making the drink, alot of people are still really unhappy about it, just wondering if you know of it in the States (a beer made from the horehound plant that is), I am sure you would love it.

I haven't heard about that plant or beverage but sounds really interesting. Actually when researching for this video I found out that sassafras has a component that is carcinogenic and big root beer companies no longer use it, they use some artificial flavor. Interesting how some of these classic drinks have some deadly ingredients.

@@TheBruSho Yeah, the deadly ingredients must kickstart your immune system making you feel better lol, mate, if you could brew some Horehound beer, you would be a legend and bring back the lost brother of root beer and ginger beer, horehound is awesome and needs to be brought back to the eye of brewer's before it is lost forever, please do a little research on this classic drink, your the man to do it, cheers mate.

@@TheBruSho The study that led to declaration of sassafras as carcinogenic was heavy flawed. To get the same results they got in lab rats a normal human would have to drink gallons of rootbeer every day. Not only that, but the oil can be removed without too much trouble. I should mention as well, the study that they did in the 1970s on rats was the only study ever done on sassafras' so-called carcinogenic properties.

I loved the horehound drinks too..!! (Grew up in Brisbane). I'm trying to experiment to make something like the Bundaberg Sarsaparilla (from scratch). Have you tried yourself? (Not using flavoured extracts)??

I've been wanting to make something like Not Your Father's Root Beer, higher ABV and not much black licorice flavor. The extract you bought, does it have that Barq's bite (that pungent black licorice taste), or is it more like A&W? I hate black licorice, so the less there is the better.

I hate black licorice too and I found this concentrate to be very good. Doesn’t have that strong anise/licorice flavor. Give it a try!

Every root beer concentrate I could find, including the one in this video contain sodium benzoate. Doesn't that inhibit fermentation?

What was the ABV of your root beer? I didn't see you use a hydrometer to get the readings. I am DEFINITELY going to have to try this, the root beer float was my FAVORITE as a kid. I have to lookup how you made the ginger bug though :) I don't see it when I search your videos so I guess it is Google time.

OK but, won't the bottles eventually explode?!?!??!?!?!?!? I've always wondered at what gravity is it safe to bottle an unfinished fermentation but this I'm scared of, or is it expected to be drank in a week at most?

Pretty sure those swing tops are made to withstand pressure. I’ve used them to bottle condition beer at 5-6% abv with no bottle bombs. If you aren’t comfortable with glass, you can always bottle in plastic. That’s how I do ginger beer.

The reason you have a hard time finding ingredients like sassafras in stores is because it isn't sold as a food safe ingredient anymore, as sassafras is carcinogenic.

Sarsperilla is just sold normaly. The chemical safrol is banned in foodstuffs and it occurs naturaly in sassafras and so only that ingredient is illigal. Or not to be sold as a food ingredient ​@@gabrielleangelica1977

Safrole was found carcinogenic at high doses in rats. Thus, it was banned by the FDA.

I tried a commercial "Hard Root Beer" (I think the Mission brand) and it was so awful. Strong dominant licorice flavor and very astringent. It was so bad, I couldn't finish the 6-pack. Not even ice cream helped.

Yeah those hard root beers are hit or miss. I plan to try making it on here at some point. Maybe I’ll even get the raw ingredients by then and make it from scratch!

@@TheBruSho I'm sure you've seen "Glen and Friends Cooking". They have a non-alcoholic root beer recipe they're quite happy with (video on their channel). You'd probably spend about $70 on ingredients, unless you can find a better herb source where you can buy just what you need. I'm not sure how the flavors will come across in the presence of alcohol or if the spices are fermented.

I’ve done it straight from the ground and drank 6 bottles years ago. It’s not that bad. It’s not toxic there were studies done with safiol oil claiming it caused cancer.. which pretty much the fda claims almost all nature stuff these days now. Not to mention the testing was done on rats.. so you know how accurate is that source
