Interesting idea. I'm thinking that putting the garlic mustard through a any blender, pureer or chopper that grinds it up really fine would be the way to go. It would ferment much better and smoother and way less work. Fermenting takes time so if its ground up I think it would go quicker and release more flavor.

I got to thinking, I make salad oils and ferments with other things like mint and green pepper. I think my puree idea might be a better way to do those too. Thanks for sparking creativity. Sometimes we get used to doing things one way and forget to try new methods.

I recently made fire cider. I know it’s not a true fermentation but the stuff is so delicious that I wanted to mention it. Thanks for sharing your great idea for the ferment!

We have the stuff everywhere in the yard! I subscribe to you a long time ago, but I don’t know if I’ve ever commented or not. Can I still use this even though it has went to seed?
