I was listening to your video as I was chopping and preparing my own fermented Pico de Gallo. I also used lots of bright colored peppers (yellow, orange, red, green) I can't wait for it to be ready! I started fermenting a year ago and am gradually trying new ferments and totally loving most of the results!

I started fermenting my hot and sweet peppers about two months ago and it is hands down the best hot sauce you will ever taste and my kids have been sharing with all their coworkers and they are in love

I really got obsessed with fermentation it started with just hotsauce but I then got into sauerkraut and for the first time this week I'm trying fermented pickles because I got a crap load of pickle recipes and stuff for pickles for Christmas lol

Looks delicious. I really enjoy ferments. At the end of my tomatoes, I take the green tomatoes and fetment a salsa with them, onions, and garlic.

I do a fermented pico degio. I do a very large batch but since I don't have the refrigerator space to store it I can it with a little lime juice as my acid. I have learned that even though canning will kill the prebiotics, dead prebiotics still provide food for healthy gut bacteria.

Hit it with the immersion blender after the fermentation to make it more saucy.

I do this and leave it kind of chunky and eat it with tortilla chips! Yum! I never thought to use the food processor before they go in the jars though. I have 1.5 gallons going now. I can’t be with it this winter.
