SSC won't allow you to go that far sideways. If you pause the video you'll notice he has everything off based upon the Manettino setting (CST).

To maintain compression in "rilascio" (don't know the term in English, I'm Italian...it's when you step off the accelerator) and to limit back flames because of unburnt gasoline fumes (exaust header is really short on F458 Italia). They don't want the car to loose compression and so throttle response and to look like an odd "dragster" spitting flames too much, also because it's street use would be affected (release flames looks cool on track but in front of your favourite Portofino golf club it's not so cool, you look more like a moron hick :-)
