INGREDIENTS for chocolate cake ( baking pan 28x18 cm, or round baking pan 26 cm)
110 g flour
20 g of cocoa
4 g baking powder
1 Tsp gingerbread spice (cinnamon, coriander, cloves, star anise, cardamom, nutmeg, ginger)
1/2 Tsp cinnamon
2 medium-sized eggs
a small pinch of salt
8 g vanilla sugar
80 g of sugar
70 ml milk (room temperature)
30 g odorless vegetable oil
the chocolate cake is baked for about 20 minutes at 175 degrees Celsius (350° F) upper-lower heat without convection on the middle rail until it is ready, and checked with a wooden stick to keep it dry and clean
Ingredients for the custard cream :
Bring 750 ml of milk to a boil
200 g of sugar
16 g vanilla sugar
80 g corn starch
250 ml cold milk
4 Eggs (Size M)
360 g soft butter
Cake residue (for one half of the cream mass)
350 g canned mandarins
Tangerine juice + 15 pieces of Savoiardi biscuits
Ingredients for the "white" cream:
250 g cold whipping cream (at least 30% fat)
8 g cream thickener
30 g powdered sugar
8 g vanilla sugar
50 g melted milk chocolate for decoration
