There is another use of the word "striking" borrowed from the theater and not film - in this case, it means you dismantle the set you were filming because all of the filming is done. That means all of the film crew and their gear has to go because the film shoot is over--cameras, dollies, foley gear, props, all that - need to be dismantled.
Another variation of "hot set" can be also used to mention that this set involves dangerous stuff that can explode, spark or be on fire, like gasoline or a Greek cook preparing an "Opa" fire" or a simulated bomb. A variant of "hot set" is "hot range". Especially in Western film shoots, often "hot range" is used in such film shoots more often because keenly in Western films, you have an awful lot of actors using simulated firearms, and/or some cases, simulated dynamite as well.
For People: executive producer, producer, line producer, technical producer, script supervisor, set painter, set Construction, vehicle fabrication, special effects coordinator, pyrotek, puppeteer, location manager, location scout, prop weapons/Armory, physical props, handheld props, set driver, transportation captain, extra wrangler, stunt coordinator, stunt performers, stand-in, media loader, studio teacher, and casting coordinator. Just a few more to add to your list, there is a lot more depending how big of production you're working, and type. Television, film, and commercial.
A few years ago Amazon studios came up here to shoot a short film to promote far cry 5 I got a call to be a grip on that set so I cannot BS my way on the set by saying I had worked on sets like that before. I spent the next five hours watching videos like this on grip equipment. So I didn’t look stupid on set. it turned out fine.

It's not the same industry when I started almost 50 years ago. Next year I'm moving to southern Utah to promote filming there. The creative industry gets into your blood. I got sick about six years ago, and had to take an early retirement. Lived in Las Vegas for the last 5 years, and I looking to live in a small town. Hollywood has changed so much and I had to move out, to crazy. But I miss working at Warmer Brothers, Paramount Pictures, and a lot of smaller production companies.
POINTS: Yell this out when carrying C stands ladders or anything that might hurt someone through a doorway or into a crowded room. ON/OFF Comms: means you’re on or off the radio.
Documents: sag talent contracts, equipment rental contracts, picture car rental contracts, prop rental contracts, location permits, fire permit, production bond insurance; location insurance, equipment insurance, picture car insurance, and film completion insurance, weather report schedule, payroll, and petty cash.
